About the Taste
As the self proclaimed brie queen, I love inventing new fun way to serve brie. I came up with these layered brie cakes, and I am obsessed. The buttery brie is whipped into a cloud and mixed with savory, earthy fresh black truffle. The combination is amazing. What I love about these brie cakes are they are actually really easy to put together, most of the prep work can be done ahead of time, but the results are so unique and stunning. You can serve them at your own dinner party, or they make amazing gifts to bring to someone’s house. I found the cutest gift boxes that fit them perfectly.

Prep the Ingredients
The Brie Wheel
Keep the brie wheel fully chilled until you’re ready to work with it. Cold brie slices cleanly and holds its shape, which matters for cutting the wheel evenly and keeping the edges neat.
The Whipped Truffle Brie
Use the triple creme brie straight from the fridge and remove the rind while it’s cold. Make sure your brie is cold when you put it in the food processor. Cold brie trims cleanly and keeps its structure, which is important for a smooth, stable whipped texture rather than a greasy or separated one.
The Toppings
Shave the truffle into thin slices using a truffle shaver. If you don’t have one, you can use a potato peeler in a pinch, but investing in a truffle shaver is so worth and you can actually use it for a lot of other things. Finely chop about one-quarter of the shavings and keep the rest sliced for making that gorgeous truffle flower topping.


Ingredient Swaps
- Brie wheel: A similar-size camembert works if you can’t find a good brie wheel. The flavor will be slightly more pronounced, but the texture and structure stay the same.
- Triple crème brie: A standard brie will work if triple crème isn’t available. The whipped mixture will be a touch less rich, but it will still whip smoothly.
- Cream cheese: Mascarpone is a reliable substitute here. It keeps the mixture smooth and rich, with a slightly softer finish.
- Black truffle: Truffle preserves are a good alternative if you can’t get fresh truffle. The flavors aren’t as pronounced but it will still taste amazing.
- Truffle salt: Flaky sea salt works if truffle salt isn’t on hand. You’ll lose the truffle aroma on top, but the overall seasoning stays right.

- This is an ideal make-ahead option. Make the brie cake, minus the toppings, and then wrap it tightly and refrigerated until you’re ready to serve. When you are ready to serve, give the whipped brie a quick whip again and add that with the truffle slices and salt just before serving.
- Make sure to whip the brie straight from the fridge. Cold brie is what creates that light, cloud-like texture. If it warms up too much, it can turn oily and lose its structure.

Yes. You can assemble the entire brie cake minus the toppings, wrap it tightly, and refrigerated until you’re ready to serve. When you are ready to serve, give the whipped brie a quick whip again and add that with the truffle slices and salt just before serving.
Fresh truffle works best if you have it, but a good-quality truffle product is fine too. The key is using something balanced so the flavor doesn’t overpower the brie.
Cold brie whips into a light, stable texture. If it warms up too much, it can separate and become oily, which affects both the look and the texture.

Truffle Brie Cake with Whipped Brie

- 1 brie wheel
- 6 oz triple creme brie, rind removed
- 2 oz cream cheese
- 1 oz black truffle
- truffle salt, to taste
Instructions
- Slice the Brie Crosswise: Place the wheel of brie flat on your cutting board and carefully slice horizontally through the middle of the brie. Set the top half off to the side.1 brie wheel
- Make the Whipped Brie: In a food processor, blend the triple cream brie (rind removed) with the cream cheese until smooth. Divide the mixture into two bowls.6 oz triple creme brie, 2 oz cream cheese
- Prepare the Truffle: Shave the truffle into thin strips. Set aside about ¼ of the shavings and finely chop them, then mix the chopped truffle into one of the bowls of brie to make whipped truffle brie.1 oz black truffle
- Make the Brie Cake: Spread the whipped truffle brie mixture on the cut side of the bottom brie slice, then place the top half over it. Press gently and, using a butter knife or a spreader, clean up around the edge, smoothing the whipped brie. Refrigerate 30 minutes to set.
- Finish and Serve: Spread the remaining plain whipped brie from the other bowl on top. Sprinkle the top with truffle salt and then arrange the rest of the black truffle slices into a flower. Chill for another 30 minutes uncovered. Serve on top of toasted baguettes slices and enjoy!truffle salt
