This brie cake appetizer is made by slicing a brie wheel in half and stuffing the middle with a fig jam whipped brie, then stacked back together. The result – a sweet and savory brie cake. Topped with fresh figs, chives and honey, this is a rich, prep-ahead, no-bake centerpiece that’s perfect for company, special occasions and gifting!

About the Taste


They said it couldn’t be done – brie inside of a brie – but I proved them wrong with the creamy layers. Brie-Ception, if you will. But seriously, this is pure, unadulterated decadence. It tastes like a buttery, velvet-textured dream.

The whipped triple cream and cream cheese filling is incredibly light and airy, while the fig jam adds a deep, jammy sweetness that grounds the earthy richness of the brie. The pistachios tucked inside provide a toasted, nutty crunch that contrasts beautifully with the smooth cheese.

It is surprisingly easy to make too. Just 15 minutes of prep and a quick chill till you’re ready, making it perfect for company and special occasions. It is also the perfect edible gift. If you were wondering about how I packed them, I found the cutest gift boxes that fit them perfectly.


Prep the Ingredients


  • The Brie: For your first brie wheel, make sure to slice it while it is very cold for a clean cut. For the triple cream brie, remove the rind while it is cold.
  • Room Temperature: Make sure the rindless triple cream brie and the cream cheese come to room temperature before adding them to the food processor. Cold brie will not get that signature fluff and may become oily instead.
  • The Produce: Quarter the fresh figs and chop the chives so they are ready for garnishing.
  • The Nuts: Finely chop the pistachios for the filling and the garnish.
  • The Baguette: Slice the bread so it is ready to fry in olive oil before serving.

Ingredient Swaps


  • Figs: If figs aren’t in season, go for slices pears, fresh raspberries or even a drizzle of a port wine reduction.
  • Pistachios: Try toasted almonds, walnuts or candied pecans instead for a nutty swap.
  • Honey: Maple syrup, agave or a touch of date syrup can easily be used instead.

Nadia’s Tips

  • Popping the triple cream brie in the freezer for exactly 5 minutes makes peeling the rind off incredibly easy. It keeps the cheese firm enough to handle without squishing it.
  • Run your knife under hot water and wipe it dry before slicing the main brie wheel. It glides right through the cold cheese for a perfectly smooth, aesthetic cut.
  • When whipping the room temperature cheeses, stop the food processor halfway through to scrape down the sides. You want a seamless, velvety texture without any hidden lumps.

Can you make this brie appetizer ahead of time?

Yes! This is very easy to make ahead. All you do is stuff the brie, cover it well, and refrigerate until serving time. When you’re ready, top it with the rest of the brie, figs, honey, salt, chives and pistachios!

How do you keep the brie from becoming soft and runny instead of cloud-like?

Bring your cheese to room temperature before it hits the food processor. If you try to whip it cold, the machine has to work too hard. That heats the firm cheese unevenly, breaks the emulsion, and leaves you with an oily, greasy mess. Softened brie whips up in seconds into a velvety, airy dream.

What can I use instead of figs?

Pears, blackberries, raspberries, even roasted grapes. Anything that offers a little sweetness to balance out the flavors.

How long does the whipped brie last in the fridge?

Store in an airtight container and it will keep in the fridge for 3-4 days.

Ingredients 

Whipped Brie Wheel

  • 1 wheel brie
  • 4 oz triple cream brie, rind removed
  • 2 oz cream cheese
  • ¼ cup pistachios, finely chopped
  • 2 tbsp fig jam

Toppings

  • 2 Fresh figs, quartered, to taste
  • 1 drizzle honey
  • chives, chopped
  • 1 sprinkle flaky salt
  • 1 tbsp pistachios, finely chopped
  • baguette slices, fried in olive oil, for serving

Instructions 

  • Slice the Brie Crosswise: Place the wheel of brie flat on your cutting board and carefully slice horizontally through the middle of the brie, like you’re cutting a bagel in half. Set the top half off to the side.

  • Make the Whipped Brie: In a food processor, blend the triple cream brie (rind removed) with the cream cheese until smooth. Divide the mixture into two bowls.

  • Add Flavor: In one of the bowls, mix in ¼ cup chopped pistachios and fig jam. Spread this mixture on the cut side of the bottom brie slice, then place the top half over it. Press gently and, using a butter knife or a spreader, clean up around the edge, smoothing the whipped brie. Refrigerate 20 minutes to set.
    ¼ cup pistachios, 2 tbsp fig jam
  • Finish and Serve: Spread the remaining plain whipped brie from the other bowl on top. Garnish with quartered figs (I used 6), a drizzle of honey, chopped chives, flaky salt, and more crushed pistachio. Serve on top of toasted baguettes slices and enjoy!
