This recipe looks fancy but it is pretty simple, slice a brie wheel in half, layer it with your stuffing the middle with a fig jam whipped brie, then stacked back together. The result – a sweet and savory brie cake. Topped with fresh figs, chives and honey, this is a rich, prep-ahead, no-bake centerpiece that’s perfect for company, special occasions and gifting!

Yes, I stuffed a whipped brie inside of a brie. It’s full-on Brie-ception. And doubling up the cheese is exactly what makes this work so well. You get the firm, nutty bite of the solid wheel right against the soft, sweet fig jam center in every single slice. The fresh figs, sticky honey, and crushed pistachios finish it off with a heavy crunch.

Prep the Ingredients
The Cheeses: The wheel needs to be cold for slicing. Remove the rind on the triple cream while it’s cold also. But afterward you need to bring it and the cream cheese to room-temperature before whipping it for that light and airy texture. This will make or break it.
The Produce: Wash and quarter the fresh figs and chop the chives..
The Nuts: Finely chop the pistachios for the filling and the garnish. You can use a food processor, knife or the flat side of a mallet.

Yes! This is very easy to make ahead. All you do is stuff the brie, cover it well, and refrigerate until serving time. When you’re ready, top it with the rest of the brie, figs, honey, salt, chives and pistachios!

Fig and Pistachio Brie Cake
- 1 wheel brie
- 4 oz triple cream brie, rind removed
- 2 oz cream cheese
- ¼ cup pistachios, finely chopped
- 2 tbsp fig jam
Toppings
- 2 fresh figs, quartered
- 1 drizzle honey, to taste
- chives, chopped, to taste
- 1 pinch flaky salt
- 1 tbsp pistachios, finely chopped
- baguette slices, fried in olive oil, for serving
Instructions
- Slice the Brie Wheel: Place the wheel of brie flat on your cutting board and carefully slice horizontally through the middle of the brie, like you’re cutting a bagel in half. Set the top half off to the side.1 wheel brie
- Whipped Brie: Cut the rind off your triple cream brie while cold then bring it to room-temperature. Add it to a food processor with cream cheese and process until smooth. Divide the mixture into two bowls.4 oz triple cream brie, 2 oz cream cheese
- Whipped Filling: In one of the bowls, mix in chopped pistachios and fig jam. Place the bottom half of your brie wheel flat and spread it on top. Place the other half of the wheel on top. Press down gently and, using a butter knife or a spreader, clean up around the edge, smoothing the whipped brie. Refrigerate for 20 minutes to set.¼ cup pistachios, 2 tbsp fig jam
- Finish and Serve: Spread the remaining plain whipped brie on top. Carefully place the quartered figs on top. Drizzle some honey, sprinkle chopped chives, flaky salt, and more crushed pistachio.
