But seriously, this whipped brie recipe is surprisingly easy to make – just 15 minutes prep, a quick chill, and this gorgeous appetizer is ready to be served!

You want the brie very cold to trim the rind – you can even pop it in the freezer for 5 minutes. Lay it flat and use a sharp knife, running it parallel just under the rind to life off the top and bottom. Then, turn the brie on its side to slice off the rind around the edges, kind of like peeling an apple.

Yes! This is very easy to make ahead. All you do is stuff the brie, cover it well, and refrigerate until serving time. When you’re ready, top it with the rest of the brie, figs, honey, salt, chives and pistachios!
Whip the brie while it’s still cold! If it sits out too long, the fat can separate, making it oily. Once it’s whipped, when it comes to room temperature you will have that cloud-like bite you’re looking for.

Whipped Brie with Figs and Pistachios

Ingredients
Whipped Brie Wheel
- 1 wheel brie
- 4 oz triple cream brie, rind removed
- 2 oz cream cheese
- ¼ cup pistachios, finely chopped
- 2 tbsp fig jam
Toppings
- 2 Fresh figs, quartered, to taste
- 1 drizzle honey
- chives, chopped
- 1 sprinkle flaky salt
- 1 tbsp pistachios, finely chopped
- baguette slices, fried in olive oil, for serving
Instructions
- Slice the Brie Crosswise: Place the wheel of brie flat on your cutting board. Rub a little oil on a sharp knife and carefully slice horizontally through the middle of the brie, like you’re cutting a bagel in half. Set the top half off to the side.1 wheel brie
- Make the Whipped Brie: In a food processor, blend the triple cream brie (rind removed) with the cream cheese until smooth. Divide the mixture into two bowls.4 oz triple cream brie, 2 oz cream cheese
- Add Flavor: In one of the bowls, mix in ¼ cup chopped pistachios and fig jam. Spread this mixture on the cut side of the bottom brie slice, then place the top half over it. Press gently and, using a butter knife or a spreader, clean up around the edge, smoothing the whipped brie. Refrigerate 20 minutes to set.¼ cup pistachios, 2 tbsp fig jam
- Finish and Serve: Spread the remaining plain whipped brie from the other bowl on top. Garnish with quartered figs (I used 6), a drizzle of honey, chopped chives, flaky salt, and more crushed pistachio.
