Prep the Ingredients
The Brie Wheel
Keep the brie wheel cold until you’re ready to slice it. Chilled brie cuts more evenly and stays firm, which helps the wheel hold its shape and keeps the edges clean.
The Cherry Whipped Brie
Work with the triple creme brie straight from the refrigerator when removing the rind and whipping it. Cold brie is easier to trim and maintains its structure in the food processor, resulting in a smooth, cohesive whipped texture instead of one that turns oily or loose. Chop your pistachios and dried cherries so they’re ready to mix in. The pistachios should be divided, half will go in the whipped brie and the other half used for topping.
The Toppings
Remove the Bada Bing cherries from the syrup and pat them dry with paper towel and trim the stems so they are even in length. You will be using half of the chopped pistachios from earlier for the topping so get those ready.

Brie Cake with Whipped Cherry Brie and Pistachios

- 1 brie wheel
- 6 oz triple creme brie
- 2 oz cream cheese
- 2 tbsp cherry jam
- 2 tbsp dried & sweetened cherries, chopped
- ¼ cup pistachios, chopped, divided
- 10 bada bing cherries in syrup, with stem, pitted
- flaky salt
- honey, to taste
Instructions
- Slice the Brie Crosswise: Place the wheel of brie flat on your cutting board and carefully slice horizontally through the middle of the brie. Set the top half off to the side.1 brie wheel
- Make the Whipped Brie: In a food processor, blend the triple cream brie (rind removed) with the cream cheese until smooth. Divide the mixture into two bowls. To one of the bowls mix in the cherry preserves, dried cherries, and half of the chopped pistachios to make your whipped cherry brie.6 oz triple creme brie, 2 oz cream cheese, 2 tbsp cherry jam, ¼ cup pistachios, 2 tbsp dried & sweetened cherries
- Make the Brie Cake: Spread the whipped cherry brie on the cut side of the bottom brie slice, then place the top half over it. Press gently and, using a butter knife or a spreader, clean up around the edge, smoothing the whipped brie. Refrigerate 30 minutes to set.
- Finish and Serve: Spread the remaining plain whipped brie from the other bowl on top. Sprinkle the top with the rest of the pistachios. Remove the cherries from the syrup and pat them dry with a paper tower. Trim the stems so they are even and then arrange the cherries on top. Chill for another 30 minutes uncovered.
