If you and your friends are fans of brie, you’re in the right place. This appetizer whips cherry preserves, cream cheese and triple cream brie into a fluffy cloud-like texture. Then you layer it between a brie wheel, top it with nutty pistachios. Finish the top off with bada bing cherries, and you have yourself an appetizer that is nothing your company has seen before!

Prep Your Ingredients

Keep the main brie wheel in the fridge until you’re ready to slice it. Then use a sharp knife for the cleanest cut.

Peel the rind off the triple cream brie while it is still cold and firm.

Allow the rindless triple cream brie and the cream cheese to come entirely to room temperature before blending. Whipping them cold will break the emulsion and make it oily, while room temperature cheese guarantees a perfectly stable, lush texture.

Chop the pistachios and measure out the cherry jam and dried cherries for the filling.

Pull the decorative cherries from their syrup, pat them completely dry with a paper towel, and trim the stems to an even length so they are ready for the aesthetic topping.

Ingredient Swaps

Brie Wheel: A same-size camembert works well if brie wheels are limited. The flavor will be slightly stronger, but the texture and structure remain intact.

Triple Creme Brie: Regular brie is a solid substitute if triple creme isn’t available. The whipped mixture will be a bit less rich but still smooth and spreadable.

Cream Cheese: Mascarpone can be used in place of cream cheese for a softer, more delicate finish. The whipped mixture will be slightly looser but still stable.

Cherry Jam: Any good-quality cherry jam works here, especially one with whole fruit. Avoid overly loose or syrupy jams, which can soften the structure.

Dried Cherries: Chopped dried sour cherries or dried cranberries are both reliable alternatives. Expect a slightly more tart bite with either swap.

Pistachios: Toasted almonds or hazelnuts can be used if pistachios aren’t available. The flavor shifts slightly, but the crunch still balances the creamy base.

Bada Bing Cherries: Amarena cherries are an excellent substitute and hold their shape well. Maraschino-style cherries are sweeter and softer but still work visually.

Nadia’s Tips

  • Let the triple cream and cream cheese come to room temperature before whipping. Blending them cold actually leaves you with stubborn lumps, and over-whipping to fix those lumps is what breaks the emulsion and turns it into an oily mess. Softened cheese whips up smooth right away.
  • Use a small offset spatula or the back of a warm spoon to smooth the whipped brie over the top. It helps you get clean, straight edges.
  • Stuff the center of the brie, wrap it tightly, and keep it in the fridge. When it’s time to serve, frost the top and add the cherries.

  • 1 brie wheel
  • 6 oz triple creme brie, room temp
  • 2 oz cream cheese, room temp
  • 2 tbsp cherry jam
  • 2 tbsp dried & sweetened cherries, chopped
  • ¼ cup pistachios, chopped, divided
  • 10 bada bing cherries in syrup, with stem, pitted
  • flaky salt
  • honey, to taste

Instructions

  • Slice the Brie Crosswise: Place the wheel of brie flat on your cutting board and carefully slice horizontally through the middle of the brie. Set the top half off to the side.

  • Make the Whipped Brie: In a food processor, blend the triple cream brie (rind removed) with the cream cheese until smooth. Divide the mixture into two bowls. To one of the bowls mix in the cherry preserves, dried cherries, and half of the chopped pistachios to make your whipped cherry brie.
    6 oz triple creme brie, 2 oz cream cheese, 2 tbsp cherry jam, ¼ cup pistachios, 2 tbsp dried & sweetened cherries
  • Make the Brie Cake: Spread the whipped cherry brie on the cut side of the bottom brie slice, then place the top half over it. Press gently and, using a butter knife or a spreader, clean up around the edge, smoothing the whipped brie. Refrigerate 30 minutes to set.
  • Finish and Serve: Spread the remaining plain whipped brie from the other bowl on top. Sprinkle the top with the rest of the pistachios. Remove the cherries from the syrup and pat them dry with a paper tower. Trim the stems so they are even and then arrange the cherries on top. Chill for another 30 minutes uncovered. Right before serving, top with flaky sea salt and drizzle with honey. Serve with toasted baguette slices and enjoy!
