Why You’ll Love Caviar and Potato Chips
These chips are inspired by cacio e pepe and they are SO good. They are so warm and delicious with the melted cheese 🧀 straight out of oven. You can eat them on their own, but adding the caviar and the créme fraîche take them up quite a few notches 🫶

How To Prepare
Preheat your oven to 300°F. Then start spreading your chips in a single layer on a baking sheet. Generously shower them with grated Parmigiano or Pecorino and fresh cracked black pepper for maximum flavor! Bake for 10-12 minutes.
While your chips are baking, mix the salt, dried chives and msg (I don’t want to hear it 😉). Right when they come out of the oven and they’re nice and warm, sprinkle your seasonings over top so it melts slightly into the cheese.
Just before serving, top your potato chips with fresh chives, serve with caviar and créme fraîche on the side.

Substitutions and Variations
- Substitutions
- Caviar → I love my Imperia Caviar, Servega, but I know it is expensive. If you are looking to save some money, another great option is Tsar Nicoulai Classic Caviar.
- Potato Chips → If you’re short on time and you just want to use already seasoned chips and just top it with caviar and crème fraîche, feel free to do that.
- Créme Fraîche → If you don’t have crème fraîche, you can substitute sour cream. It’s not exactly the same but similar.
- Variations
- No Caviar Variation → You can make these chips on their own and they are still delicious!
- Shallot Variation → If you want extra kick, you can also top it with very thinly sliced shallots.

Add your seasoning when the chips are fresh out of the oven. The heat helps the seasoning to stick and combines better to the chips.
Recipes That Pair
Drink 🍸 Cucumbertini – This is a light and fresh cocktail made with cucumber juice, gin (or vodka), vermouth bianco, lemon, and a touch of agave syrup. It would pair wonderfully with these Caviar Potato Chips.
Main 🍽️ Scallops Meunière – Seared scallops in a buttery sauce with capers and parsley. This is a luxurious but still light dish that will maintain your elegant seafood theme.
Side 🩷 Pink Pasta Salad – A pasta with a creamy, tangy dressing with bursts of cherry tomatoes and fresh basil. This is a nice refreshing addition.
Dessert 🍮 Berry Panna Cotta – You can’t go wrong with a silky smooth Berry Panna Cotta. There are the best for company because the are fool-proof and you make them ahead of time.
Caviar & Potato Chips: Questions Answered
While I love my Imperia Caviar, Servega, it is expensive. If you are looking to save some money, another great option is Tsar Nicoulai Classic Caviar.
It depends on the brand, but the caviar I used for these chips says it will last about 4-5 days.
You can just eat it straight or I love this Smoked Salmon Caviar Pizza as another appetizer option or just to treat yourself!
Caviar and Potato Chips

Equipment
- 1 baking tray
Ingredients
- 1 bag kettle unsalted
- ½-1 tsp MSG
- pinch of seasoned salt or plain salt
- Lots of black pepper
- Parmigiano, or Pecorino, to taste – but be liberal
- 1 tbsp dried chives
- Fresh chives to taste
- Crème fraîche
- Caviar to taste, I’m using Sevruga
Instructions
- Spread the chips on an even layer on a baking sheet. Add the parm (a lot of it) and black pepper. Again, lots of it.
- Bake at 300°F for 10-12 minutes.
- Mix the salt, dried chives and msg. Sprinkle over the chips.
- Top with fresh chives, serve with the caviar and créme fraîche.
