These chips are inspired by cacio e pepe and they are SO good. They are so warm and delicious with the melted cheese straight out of oven. You can eat them on their own but the caviar and the créme fraîche take them up quite a few notches.

1 baking tray
Ingredients
1bag kettle unsalted
½-1tspMSG
pinchof seasoned salt or plain salt
Lots of black pepper
Parmigiano, or Pecorino, to taste - but be liberal
1tbspdried chives
Fresh chives to taste
Crème fraîche
Caviar to taste, I'm using Sevruga
Instructions
Spread the chips on an even layer on a baking sheet. Add the parm (a lot of it) and black pepper. Again, lots of it.
Bake at 300°F for 10-12 minutes.
Mix the salt, dried chives and msg. Sprinkle over the chips.
Top with fresh chives, serve with the caviar and créme fraîche.
