Heavy Cream Scrambled Eggs! Just like my heavy cream fried eggs but somehow these are better? Custardy and perfect.

Ingredients 

  • 5-6 eggs
  • 1/3 cup heavy cream
  • 1 tbsp salsa macha, more for topping
  • Chives
  • Seasoned salt or salt/pepper to taste

Directions 

  • Whisk your eggs and strain
  • Preheat a pan for 2 min on med high. Add in cream and caramelize on medium 2-3 minutes
  • Add in salsa macha and your eggs
  • Let them barely set, add salt/pepper and just move them around ever so slightly so you have large curds
  • Divide into 2 plates, add more salsa macha on top and an obscene amount of chives
