These eggs are custardy and perfect! They are extremely easy to make and the heavy cream adds the best touch. Trust me… Once you try eggs like this, you won’t go back to plain boring eggs. You know I am obsessed with salsa Macha, because it adds a nutty and spicy element and makes this recipe even better. Of course, you know I love to top with chives, because I am obsessed with the flavor it adds.

How To Prepare Heavy Cream Scrambled Eggs

🥚 First, whisk your eggs and strain.

🍳 Secondly, preheat a pan for 2 minutes on medium high. Then, add in cream and caramelize on medium 2-3 minutes.

🌶 Add in salsa Macha and the eggs.

🧂 Then, let them barely set, add salt & pepper and just move them around ever so slightly so you have large curds.

🌟 Divide into 2 plates, add more salsa Macha on top and an obscene amount of chives.

Substitutions and Variations

  1. You can use any herbs of your choice instead of chives.
  2. If you don’t want them spicy, you can take the salsa Macha out.
  3. If you can’t find salsa Macha, you can use chili crisp!

  • 6 Eggs
  • 1/3 cup Heavy cream
  • 1 tbsp Salsa macha, more for topping
  • Chives
  • Seasoned salt , or salt/pepper, to taste

Instructions 

  • First, whisk your eggs and strain.
