Vodka Eggs 😻 When I tell you these are worth every bite I mean it… You know I am obsessed with eggs, and I love to play around with different ingredients, and these ones were epic!

I cooked 5 eggs bc I miscounted 😂 but typically you do 6 eggs for 3 servings.

These eggs are so freaking good. They are rich, spicy and a little bit sweet. They are super easy to make, and you will be taking breakfast to the next level.

How To Prepare Vodka Eggs

🧄 First, preheat a pan on medium for 2 minutes, add a touch of olive oil and sauté the shallots and garlic for 2 minutes. Then, add in crushed red peppers and tomato paste. Cook together on medium high for 3 minutes. Mix often.

🌿 Secondly, deglaze with vodka and cook until liquid is evaporated. Then, add in oregano, salt and pepper.

🌟 Add in heavy cream. Then, simmer for 2 minutes until it slightly caramelizes.

🍳 Add in eggs and cook on medium high for 1 minute. Then, cover and cook until they set. About 3 minutes.

🧀 Lastly, add Parmigiano on top, fresh basil, more crushed red peppers, black pepper and drizzle of olive oil.

Substitutions and Variations

  1. You can use any cheese of your choice instead of Parmigiano.
  2. You can use any of your favorite herbs, or which ever ones you have on hand instead of basil.
  3. You can adjust the amount of crushed red peppers to your desired level of heat.

  • 1 small shallot, chopped

  • 1/4 cup tomato paste
  • 2 tbsp crushed red peppers, adjust to taste
  • 1 tbsp vodka , or 1/2 small jigger
  • 1/2 cup heavy cream, + 1 tbsp
  • 6 eggs
  • 1/4 tsp oregano
  • Salt and pepper, to taste
  • Parmigiano , to taste
  • basil leaves, fresh, to taste
  • Black pepper, to taste
  • Olive oil
