Ever since I saw the amazing honey butter toast from Arôme bakery in London I haven’t been able to get it out of my mind. I wanted this Brown Sugar Brioche Toast to be baked and perfectly crispy out of the oven and then topped with a sweet whipped brie that had a savory bite, if you will. This viral honey butter toast is now an amazing appetizer VS a dessert, and it is PERFECT.

Why You’ll Love Brown Sugar Brioche Toast
This Brown Sugar Brioche Toast is so simple to make and so easy to eat! You bake the brioche in the oven covered in a delicious butter till it comes out a gorgeous golden toast. The whipped lavender honey brie on top adds a creamy, savory note that compliments the sweet SO well.

How To Prepare
Prep the Bread
- 🍞 Cut off the edges of the bread and cut each slice into 2 rectangles. Place on a sheet pan with parchment paper and bake at 380°F for 2 minutes and then flip and bake for another 2 minutes. This initial bake will dry them out slightly and produce better results in the end.
The Butter
- 🍯 Mix the butter, honey, a pinch of salt and brown sugar.
- 🧈 Spread a thin layer of the butter on every side of the brioche, don’t forget the end caps.
Bake
- 🔥 Bake at 380°F for 8-11 minutes (check at the 8 minute mark) on the first side, flip over and bake another 6-7 minutes or until deeply golden, be careful not to burn.
- 🆒 Let them sit on a cooling rack for 20 minutes.
Whipped Brie topping and Enjoy!
- 🥣 Whip the brie and cream cheese.
- 🍽️ Pipe the cheese onto the toasts, drizzle honey, lavender and flaky salt.

Don’t skip the initial bake. It dries out the outer part of the bread so that you have a crispier end result while still keeping the fluffy center!
Substitutions and Variations
- Substitutions
- The lavender flowers add a nice floral taste, but if you don’t have them handy they are completely optional.
- If you don’t want to use brie, Fromager D’Affinois Saint Angel is similar enough to brie but it is creamier and would work great topping these Brown Sugar Brioche Toasts.
- Variations
- Vanilla Bean Mascarpone Variation: If you do want to take this the dessert route, a vanilla bean mascarpone topping with fresh strawberries would be an excellent choice of toppings!
- Toasted Almond Variation: For a nutty pop, add sliced toasted almonds to the top of this dish.
The Perfect Pairings
🍷 Drink: A Pomegranate Mimosa with it’s subtle floral undertone would pair great with these.
🥩 Dinner: Honestly, most things would go with this as an appetizer. I would stay clear of sushi and very traditional Mexican dishes. But a yummy steak, chicken, pasta, pork, all of it would go great!
Brown Sugar Brioche Toast: Questions Answered
You can use a hand mixer or even do it by hand. It will definitely count as a work out if it’s by hand but it will work. Remove the rind from the brie while cold and let it, as well as the cream cheese, come room temperature so it mixes easier.
I bought dried lavender flowers on Amazon.
For this Brown Sugar Brioche Toast, I bought Fromager D’Affinois. I am also a big fan of Fromager D’Affinois Saint Angel. It’s similar to brie but creamier.

Equipment

- ziploc bag for piping the whipped feta, or piping bags

Ingredients
- 3 thick slices of brioche, I hand cut mine and they were 2½ inches thick
- 7 tbsp butter, unsalted, softened
- Pinch of salt
- 5 tbsp brown sugar
- 2½ tbsp honey, + more for topping
- 5 oz brie, rind removed
- 1 oz cream cheese
- Lavender flowers, to taste
- Flaky salt, to taste
