Why You’ll Love Frozen Skyr

This frozen treat is lemony, creamy and delicious! They truly make for the best dessert. They are gorgeous and super easy to make. Perfect for a hot summer day! I was craving something cold and sweet, and came up with this and it did not disappoint in the slightest. You don’t have to serve them inside the lemon, but I wanted to be extra lol. You will be obsessed… trust me!

How To Prepare Frozen Skyr

🍋 First, slice the ends of the lemons so they lay flat and cut in half. Juice the lemons and reserve 1/4 cup of the juice, store the rest

❄️ Secondly, remove the membrane from the lemon and place in a freezer bag. Freeze overnight.

❤️ Lastly, in a bowl, add the skyr, condensed milk, lemon and lemon zest. Then, add to an ice cream container and freeze. You can also use an ice cream maker for a creamier result.

Substitutions and Variations

  1. You can use plain or greek yogurt instead of skyr.
  2. You can use your favorite fruit instead of lemon, such as strawberries or oranges.

Chef Nadia’s Tip

Using an ice cream maker will make it creamier but it isn’t needed.

  • 6-8 lemons
  • 1 (30) oz plain whole milk skyr, I used Icelandic Provisions
  • 1/4 cup lemon juice, fresh
  • 1 (14) oz can of condensed milk

Directions
