No Churn Pitaya Ice Cream

No churn pitaya ice cream…I have the best memories of the paleteros outside grocery stores or in their tricycles selling this ice cream in 1 liter styrofoam containers all over town…I’ll admit theirs was better but here’s my take! ❤️ Hope you enjoy…

Ingredients 

  • 1 pint heavy cream
  • 1 can condensed milk
  • 3 cups frozen dragon fruit or pitaya cubes
  • 1/3 c sugar

Directions 

  • Whip the heavy cream until peaks form
  • Slightly thaw the pitaya and blend 2 1/4 cups of it until smooth
  • Add the condensed milk to the blended pitaya and mix well
  • Fold the pitaya mixture into the whipped cream. Freeze in an ice cream container
  • Add the remaining pitaya to a saucepan with the sugar and bring to a boil. Mash with a spoon and there’s your topping
