How to Prepare this Dragon Fruit Ice Cream

🥛 Whip the Cream: Beat heavy cream until it forms peaks.

🥣 Mix the Ingredients: Slightly thaw and blend 2 1/4 cup of dragon fruit until smooth. Combine that with sweetened condensed milk and mix thoroughly.

🥶 Fold the dragon fruit mixture and the whipped cream and freeze in an ice cream container.

🎛️ Heat the remaining dragon fruit with sugar in a saucepan until it boils, then mash to create your ice cream topping.

Substitutions and Variations

  1. If dragon fruit isn’t available, you can substitute it with an equal amount of another tropical fruit like mango or kiwi, which will also blend well into the creamy textures.
  2. If you’d like to add a little texture contrast, feel free to add shredded coconut, mixed nuts or even small chunks of pineapple.

Chef’s Tip

One of the most common mistakes people make when trying to form stiff peaks is the cream isn’t cold enough. Put in a bowl, cream and whisk in the fridge until you’re ready to whip. Another mistake is people using the wrong tool for whipping. A whisk is needed to mix properly because it allows the most air to mix in with the cream. And lastly, make sure to whip on high. A low setting with just mix the cream, and you need to have it on a high setting to have enough air to mix in and form stiff peaks. It should take about 7-8 minutes.

Ingredients 

  • 1 pint heavy cream
  • 1 can sweetened condensed milk
  • 3 cups frozen dragon fruit cubes, or pitaya cubes
  • 1/3 cup sugar

Instructions 

  • Whip the heavy cream until peaks form.
  • Slightly thaw the dragon fruit and blend 2 1/4 cups of it until smooth.
  • Add the sweetened condensed milk to the blended dragon fruit and mix well.
  • Fold the dragon fruit mixture into the whipped cream. Freeze in an ice cream container.
  • Add the remaining dragon fruit to a saucepan with the sugar and bring to a boil. Mash with a spoon for your topping and that is it!
