Golden cheddar Mac and cheese arancini on creamy tomato sauce, topped with grated Parmesan, chopped chives, and fresh basil.

Crispy Bites, Cozy Nights

We’re comfort maxing this season, and these cheddar arancini have all the creamy richness of mac and cheese with a golden crunch on the outside. Break one open and you get buttery risotto and a gooey, melted cheddar center. Drag a bite through the creamy tomato sauce, grab your favorite blanket and get cozy.

Key Takeaways

  • You may not need all the broth. Stop adding it when the rice is tender with a slight bite and no hard center. There should be no loose liquid left.
  • Cold and firm matters more than the clock. If the rice mixture won’t hold its shape, give it more time in the fridge.
  • Use mild cheddar for the filling and seal every crack. Keep an even layer of rice around the cheese.
  • Check both temperatures. Start each batch with the oil at 350°F and cook until the centers reach 165°F. A golden crust doesn’t mean the middle is ready.

Tips & Tricks

Shaping and Frying Mac and Cheese Arancini

Give the rice time to chill. Shaping these is much easier when the mixture is cold all the way through. If it won’t hold a ball, don’t keep fighting with it. Give it more time in the fridge. If it’s holding together but sticking to your hands, lightly dampen them before rolling the next one.

Take a second to check for cracks. You want that melted cheddar in the middle when you bite into these. Keep an even layer of rice around the filling and press any seams closed before breading.

Check the oil before you start. Heat it to 350°F, checking with a deep-fry thermometer. Keep the thermometer in the oil without touching the bottom of the pot, and adjust the heat as you cook. Without a thermometer, test with a small piece of bread. It should sizzle and gradually turn golden. If it darkens right away, lower the heat and let the oil cool a little before testing again. The bread test is only a rough guide, so a thermometer is still the most reliable option.

Fry a few at a time. Leave enough room to turn the arancini easily. Adding too many at once cools the oil. Let it return to 350°F before adding the next batch, and keep the remaining balls in the fridge while you fry.

Check inside before serving. The outside can turn golden before the center is hot. Lift an arancino out of the oil and check the middle with an instant-read thermometer. It should reach 165°F.

Making Arancini Ahead of Time

If you’re having people over, get the filling and shaping done earlier in the day. Keep the balls covered in the fridge, then coat and fry close to serving.

Spread the rice mixture in a thin layer and refrigerate it promptly. You want to cool the rice quickly, ideally within an hour, so don’t leave the saucepan on the counter waiting for it to cool completely. Cover loosely while it cools, then cover fully once cold.

Mix the pastella, the flour-and-water batter, just before coating so the water is still cold. Have the creamy tomato sauce warm and ready before you start frying.

The Perfect Pairings

Start with a London Mule and a plate of these while they’re hot. The cinnamon and ginger give the cocktail a little warmth, and the lemon is especially good with the cheddar. For dinner, I’d make Chicken Marsala with Fennel Apple Salad on the side. You get that rich mushroom sauce with crisp, tart apple between bites. Finish with Salted Pecan Pie, with its brown-butter crust and dulce de leche filling. That’s my kind of November dinner.

Frequently Asked Questions

How do I reheat arancini without making them soggy?

Reheat them uncovered on a baking sheet in a 350°F oven until the centers reach 165°F. Keep the sauce separate and add it when serving. They’re best freshly fried, so expect some difference in the coating and filling after reheating.

Can I freeze arancini?

Yes, you can freeze them after frying. Refrigerate them promptly, then freeze the chilled balls in a single layer on a baking sheet. Once frozen, transfer them to a freezer bag or airtight container. Thaw in the refrigerator, then reheat in the oven until the centers reach 165°F. Freeze the sauce separately.

Why are the outsides golden but the cheese inside hasn’t melted?

The oil may be too hot, or the balls may be larger than the portions in the recipe. Check that the oil is at 350°F and keep the balls evenly sized. If the coating is already golden, finish heating them in a 350°F oven until the centers reach 165°F.

Cook the Risotto

  • Warm the bone broth in a saucepan and keep over low heat.
    4½ cups bone broth

Combine and Chill

  • Coat completely in breadcrumbs, pressing gently to help them stick.
