French Eggs 💛 Obviously not traditional BUT delish. Croque madame is one of my favorite sandwiches. Traditionally, Croque madame is a sandwich with a fried egg on top. But I decided to change it up a bit, and experiment and it did not disappoint. These were absolutely delicious. Even my sister who isn’t a fan of eggs, absolutely devoured these. I like to top mine with salsa macha, but that is completely optional.

These croque madame inspired eggs are fantastic, but don’t take my word for it, you HAVE to try them! The bread, and the ham elevate the eggs so much and they taste delicious! Frying eggs in heavy cream has been a game changer in my kitchen and a must.

How To Prepare French Eggs

🧈 First, preheat pan on high for 2 minutes. Then, lower heat to medium, add in butter and bread. Toast in the pan for about 5 minutes or until golden.

🍳 Secondly, add in ham and sauté for 2-3 minutes. Make a well in the center and add in your cream and nutmeg. Caramelize for about 3 minutes. Then, add cheese to the edges of the pan and your eggs in the center.

🌿 Lastly, cook covered until set, top with black pepper, salt and lots of chives.

Substitutions and Variations for French Eggs

  1. You can use turkey instead of ham.
  2. I garnished mine with chives, but you can garnish with your favorite herbs.
  3. You can use any cheese of your preference instead of gruyere.

Make sure you cover the bread with the béchamel entirely.

Ingredients 

  • 2 cups bread, crusty and cubed
  • 6 slices ham, cubed, I used jambon de paris
  • 1/3 cup heavy cream
  • nutmeg, just a pinch
  • 1/2 cup gruyere, grated
  • 4 eggs
  • 1 tbsp butter
  • Salt and pepper , to taste
  • Chives, to taste
