Eggs Alla Vodka 😻 When I tell you these are worth every bite I mean it…they are rich, spicy and a little bit sweet.

I cooked 5 eggs bc I miscounted 😂 but typically you do 6 for 3 servings.

Eggs Alla Vodka 😻 When I tell you these are worth every bite I mean it…they are rich, spicy and a little bit sweet.
I cooked 5 eggs bc I miscounted 😂 but typically you do 6 for 3 servings.

Ingredients 

  • 1 small shallot, chopped
  • 1 large garlic clove, minched
  • 1/4 cup tomato paste
  • 2 tbsp crushed red peppers, adjust to taste
  • 1 tbsp vodka or 1/2 small jigger
  • 1/2 cup + 1 tbsp heavy cream
  • 6 good eggs
  • 1/4 tsp oregano
  • Salt & pepper to taste
  • Parmigiano to taste
  • Fresh basil leaves to taste
  • Black pepper to taste
  • Olive oil

Directions 

  • Preheat a pan on medium for 2 min, add a touch of olive oil and sautee the shallots and garlic for 2 min. Add in crushed red peppers and tomato paste. Cook together on medium high for 3 min. Mix often
  • Deglaze with vodka and cook until liquid is evaporated. Add in oregano, salt and pepper
  • Add in heavy cream. Simmer for 2 min until it slightly caramelizes
  • Add in eggs and cook on medium high for 1 min, cover and cook until they set. About 3 min
  • Add parmigiano on top, fresh basil, more crushed red peppers, black pepper and drizzle of olive oil
