Baked Feta & Tomatoes… If I’m being honest I didn’t love the #bakedfetapasta trend but have always loved baked feta & garlicky tomatoes.

Ingredients 

  • 1 pint cherry tomatoes, poke a hole in them
  • 8 oz block feta
  • 4 garlic cloves, thinly sliced
  • 1/4 cup pine nuts
  • Parsley to taste
  • 3 tbsp olive oil and some to drizzle on the feta
  • 1 lemon, zest
  • 1 tsp oregano
  • 1 tsp crushed red peppers
  • Salt and pepper to taste
  • 1 tbsp honey
  • Fresh parsley to taste

Directions 

  • Add the tomatoes, garlic, pine nuts, honey, lemon zest, olive oil, salt, pepper crushed red peppers and oregano to a baking dish
  • Top it with the feta, drizzle some olive oil and oregano
  • Bake at 400F for 30-40 min or until feta is all golden. Baste half way through
  • Top it with fresh lemon juice and parsley
  • Enjoy with crusty bread
