You’ll need 1 large yolk per every 3-4 eggs. So just adjust if you want to make a large batch.

The BEST scrambled Eggs

The BEST scrambled eggs have a secret ingredient…an extra yolk! It takes them to the next level + it’ll make it harder to overcook.

Ingredients 

  • 3-4 whole eggs
  • 1 egg yolk
  • 1 tbsp butter
  • 1 tbsp crème fraîche
  • 1 tbsp chives
  • Salt/pepper or seasoned salt to taste

Directions 

  • Add the eggs + extra yolk in a bowl and whisk until nice and airy
  • Strain eggs into another bowl, trust me…this makes them creamier!
  • Preheat a pan on low for 2 min. Add butter. Once it melts add in eggs
  • Do not disturb them until the edges start setting then push the edges to the center with a spoon so they all set and cook.
  • Once they are almost set add in crème fraîche and salt/pepper. Mix carefully if you like large curds
  • Serve with chives and enjoy!
