Trust me… You won’t go back to making eggs how you used to. The extra yolk is such a good hack. These eggs are so creamy and perfect! I love topping with chives and salsa macha but that is completely optional. You know that I love adding a spicy touch. The crème fraîche adds in richness and flavor.
How To Prepare The BEST Scrambled Eggs
🍳 First, add the eggs and the extra yolk in a bowl and whisk until nice and airy.
🥣 Secondly, strain the eggs into another bowl, trust me…this makes them creamier!
🧈 Then, preheat a pan on low for 2 minutes. Add butter. Once it melts add in eggs.
🔥 Do not disturb the eggs until the edges start setting then push the edges to the center with a spoon so they all set and cook.
🧂 Once they are almost set, add in crème fraîche and salt/pepper. Then, mix carefully if you like large curds.
🌿 Lastly, serve with chives and enjoy!
Substitutions and Variations
- You can use sour cream, or heavy cream instead of crème fraîche.
- You can swap the chives for any of your favorite herbs or which ever ones you have on hand.
- I also topped with salsa macha, but that is completely optional.

You’ll need 1 large yolk per every 3-4 eggs. So just adjust if you want to make a large batch.
