Why You’ll Love Mortadella Cheese Bites
These little bites are to DIE for! They’re rich, creamy, herby, spicy with a perfect touch of sweet. They’re also so easy to make and you can prep most of it ahead of time which is perfect for company!

How To Prepare
Mortadella Cheese Bites
Mix together the brie and goat cheese. Place that in a piping bag and then pipe a decent amount on the center of the mortadella slice but toward one end. Wrap it tightly as shown in my Mortadella Cheese Bites Video. Let them sit in the fridge 20 minutes, don’t skip this step because you need the cheese super cold so it doesn’t melt everywhere while cooking. Preheat a non-stick pan for 3 minutes on medium high and place the mortadella, fold side down, to seal. It’s ok if a bit of cheese oozes out, it’ll create a crust. Get it crispy on all sides.
Hot Honey
Mix the rosemary, honey and salsa macha. Add some to the pan when the bites are all crispy (reserve some for topping) and let it cook for 1 minute.
Serve your Mortadella Cheese Bites topped with more honey and crushed red peppers.

🔥Chef Nadia’s Tip🔥
- Do not skip the step of putting them in the refrigerator. The cheese needs time to get cold so that when you cook it on the stove it doesn’t get everywhere.
- If you’re having a hard time keeping the roll together, you can always secure them with a toothpick.
Substitutions and Variations
- Substitutions
- For this recipe, you can use cream cheese instead of goats cheese if you’re not a fan.
- Prosciutto or whatever your favorite sliced protein is can easily be substituted for the mortadella.
- If you’re short on time, you can just use hot honey that you buy from the store instead of making your own.
- Variations
- Toasted Crostini Variation: You can serve these on top of crostini’s toasted in olive oil for an extra crunch!
- Fig Variation: Add some delicious figs to the side of these for a little extra sweet surprise.
