Mix together the brie and goat cheese. Place in a piping bag.
Pipe a decent amount on the center of the mortadella slice but toward one end. Wrap it tightly as shown in the video. Let them sit in the fridge 20 minutes.
Preheat a non-stick pan for 3 minutes on medium high.
Place the mortadella fold side down to seal. Its ok if a bit of cheese oozes out, it'll create a crust. Get it crispy on all sides.
Mix the rosemary, honey and salsa macha. Add some to the pan when the bites are all crispy (reserve some for topping) and let it cook for 1 minute.
Serve, top with more honey, crushed red peppers and that's it.
