I made this drink all of last summer , especially during pool days. My brother who isn’t a gin drinker loooved it and he kept asking for more. This drink is so fresh and delicious. The mint adds such a good touch, and it does make a difference in the taste. This recipe is very versatile, because you can play around and change the gin for your alcohol of choice. You can also do a sugar rim, or a Tajin rim (which is my favorite) to give it that extra touch.

How To Prepare Gin Sorbet

🥒 First, peel cucumber and remove seeds. Cube. Squeeze some lemon in it and freeze in a freezer bag.

🍋 Secondly, add to a food processor with the remaining lemon juice, agave, mint and monk fruit. Process until semi smooth.

🍾 Add in gin, and process until smooth.

❄️ Keep in the freezer or enjoy immediately.

Substitutions and Variations for Gin Sorbet

  1. You can use your favorite alcohol instead of gin, such as vodka or even tequila!
  2. You can also use mandarin, watermelon or anything you like instead of cucumber.
  3. You can enjoy it as a spritz as well, and can add prosecco as well!

Cube the cucumber pretty small so it is easier to process!

Ingredients 

  • 5 cucumbers, large
  • 1 lemon
  • 2 tbsp agave syrup
  • 1 tbsp monk fruit, or sugar of choice
  • 9 mint leaves
  • Gin, to taste, I did about 5 oz
  • Prosecco

Instructions
