Fried Almond & Apple Salad… This is one of my go to’s! So easy, flavorful and delicious.

Recipe Tip

Soaking your apples in salted ice water (1/2 tsp per cup) for 5-10 min makes them not to turn brown. Also, using extra aged cheddar like Unexpected Cheddar from TJs or what I used here which is the Tillamook Maker’s Reserve.

Fried Almond & Apple Salad

Fried Almond & Apple Salad…This is one of my go to’s! So easy, flavorful and delicious.


  • 2 granny smith apple, I like them tart
  • 1-5 oz container Arugula
  • 1/4 cup freshly grated AGED white cheddar + more shaved on top of the salad
  • 3/4 cup sliced almonds
  • 1 tsp honey
  • 2 tbsp red wine vinegar
  • 1/2 lemon
  • 1 tsp dijon mustard
  • 1 tsp mayo
  • 1/3 cup + 2 tbsp olive oil
  • Pinch of salt and pepper


  • Slice your apples VERY thin and soak in salted ice water
  • Mix together the grated cheddar, honey, vinegar, lemon, 1/3 c olive oil, salt, pepper, dijon and mayo
  • Fry the almonds in the 2 tbsp olive oil until nicely golden
  • Add the arugula in a mixing bowl with the apples and the dressing. Massage it in. You might have some dressing leftover
  • Top it with the almonds, shaved cheddar and cracked pepper
