Arugula Apple Salad 🥗 This is one of my go-to’s! So easy, flavorful and delicious.

This salad is very fresh and delicious. Perfect as a side dish, or even as a main. I like to make this when I am craving a light and easy meal. It’s very easy to make, and the flavors are unreal!

How To Prepare Arugula Apple Salad

🍏 Slice your apples VERY thin and soak in salted ice water. The salted ice water will not effect the taste but it will prevent the apples from browning.

🍯 Whisk together the grated cheddar, honey, vinegar, lemon, 1/3 cup olive oil, salt, pepper, dijon and mayo. Set aside to marinate.

🥜 Fry the almonds in the 2 tbsp olive oil until nicely golden.

🌿 Add the arugula in a mixing bowl with the apples. Taste test to make sure you don’t need to adjust anything on the dressing and when you’re happy withit, add as must dressing as you would like and gently massage it in. You might have some dressing leftover.

🧀 Top it with the almonds, shaved cheddar and fresh cracked pepper.

Substitutions for Arugula Apple Salad

  1. You can use any apples of your choice instead of granny smith apples.
  2. You can use your favorite greens instead of arugula.
  3. You can use any nuts of choice instead of almonds.

Chef Nadia’s Tip

Soaking your apples in salted ice water (1/2 tsp per cup of water) for 5-10 minutes will not effect the taste but it will stop them from turning brown.

How far ahead can I make the dressing for this arugula apple salad?

The dressing will last 3-5 days in the fridge. Make sure you store it in an airtight container and give it a good shake before using because the ingredients will separate a bit. Just make sure you wait till right before serving to add it to the salad.

What dijon mustard do you use?

For this Arugula Apple Salad I used Grey Poupon Dijon Mustard. You can use any grainy mustard that you like.

Where did you get your cheese grater?

I bought mine at Target. They are sold out a lot so I’ll link one on Amazon that’s very similar. This Cheese Grater holds more cheese which is nice if you’re making pizzas or grating cheese for a bigger recipe.

Ingredients 

  • 2 apples, granny smith, I like them tart
  • 5 oz arugula, 1 container
  • ¼ cup aged white cheddar, freshly grated, and more shaved for topping the salad
  • ¾ cup almonds, sliced
  • 1 tsp honey
  • 2 tbsp red wine vinegar
  • ½ lemon
  • 1 tsp dijon mustard
  • 1 tsp mayo
  • cup olive oil, plus 2 tbsp
  • Pinch of salt and pepper

Instructions
