Arugula Apple Salad

This is one of my go-to’s! It is so easy to make so it's perfect for weekdays. It is also so flavorful and delicious.

Ingredients
2
apples
granny smith, I like them tart

oz
arugula
1 container
¼
cup
aged white cheddar
freshly grated, and more shaved for topping the salad
¾
cup
almonds
sliced
1
tsp
honey
2
tbsp
red wine vinegar
½
lemon
1
tsp
dijon mustard
1
tsp
mayo
⅓
cup
olive oil
plus 2 tbsp

of salt and pepper
Instructions
Slice your apples VERY thin and soak in salted ice water (this prevents browning). 1/2 tsp per cup of water for 5-10 minutes.
Mix together the grated cheddar, honey, vinegar, lemon, 1/3 cup olive oil, salt, pepper, dijon and mayo.
Fry the almonds in the 2 tbsp olive oil until nicely golden.
Add the arugula in a mixing bowl with the apples and the dressing. Massage the dressing in gently. You might have some dressing leftover.
Top it with the almonds, shaved cheddar and fresh cracked pepper.
