These cucumber salmon bites are the perfect appetizer! They are fresh, a tad spicy, and extremely delicious. I mean… apart from being delicious, they are gorgeous. These will step up your appetizer game and leave your guests speechless!

How To Prepare Cucumber Salmon Bites

πŸ”ͺ First, chop the salmon pretty small. Then, add to a bowl with the mayo, sriracha, chives, Tamari and sesame oil. Mix well.

πŸ₯’ Secondly, using a potato peeler, peel some ribbon looking strands out of the cucumber. Don’t use the seedy part, but save it for juice.

🌟 Place 2 cucumber ribbons next to each other, overlapping. Then, forming a cross at a little below the halfway point add 2 other ribbons of cucumber overlapping each other.

🍚 Then, add about 1 tbsp of sushi rice and 1-1.5 tbsp spicy salmon. Top with a cucumber slice. Then, start forming the envelopes.

❀️ Top with sesame seeds and togarashi.

🍣 Lastly, serve with the sauce.

Substitutions and Variations

  1. You can use tuna, crab, or your fish of choice instead of salmon.
  2. You can make these vegetarian by swapping the salmon for tofu or your favorite vegetables.
  3. You can use regular mayonnaise instead of Japanese mayo.
  4. You can use soy sauce instead of Tamari.

Ingredients 

  • 6-8 oz salmon, sushi grade
  • 1 cup sushi rice
  • 3-4 cucumbers, large
  • Black and toasted sesame seeds
  • 1/4 cup chives
  • 1/4 cup japanese mayo
  • 3 tbsp sriracha
  • 1.5 tsp tamari
  • 1.5 tsp sesame oil
  • Avocado slices
  • Togarashi

Sauce

  • 1 lemon
  • 1 lime
  • 2 green onions, chopped, white and green part
  • 1 large serrano, chopped
  • 1/4 cup tamari
