How To Prepare Cucumber Salmon Bites

🔪 First, chop the salmon pretty small. Then, add to a bowl with the mayo, sriracha, chives, Tamari and sesame oil. Mix well.

🥒 Secondly, using a potato peeler, peel some ribbon looking strands out of the cucumber. Don’t use the seedy part, but save it for juice.

🌟 Place 2 cucumber ribbons next to each other, overlapping. Then, forming a cross at a little below the halfway point add 2 other ribbons of cucumber overlapping each other.

🍚 Then, add about 1 tbsp of sushi rice and 1-1.5 tbsp spicy salmon. Top with a cucumber slice. Then, start forming the envelopes.

❤️ Top with sesame seeds and togarashi.

🍣 Lastly, serve with the sauce.
