Ingredients
6-8ozsalmon, sushi grade
1cupsushi rice
3-4cucumbers, large
Black and toasted sesame seeds
1/4cupchives
1/4cupjapanese mayo
3tbspsriracha
1.5tsptamari
1.5tspsesame oil
Avocado slices
Togarashi
Sauce
1lemon
1lime
2green onions, chopped, white and green part
1large serrano, chopped
1/4cuptamari
Instructions
First, chop the salmon pretty small. Then, add to a bowl with the mayo, sriracha, chives, Tamari and sesame oil. Mix well.
Secondly, using a potato peeler, peel some ribbon looking strands out of the cucumber. Don’t use the seedy part, but save it for juice.
Place 2 cucumber ribbons next to each other, overlapping. Then, forming a cross at a little below the halfway point add 2 other ribbons of cucumber overlapping each other.
Then, add about 1 tbsp of sushi rice and 1-1.5 tbsp spicy salmon. Top with a cucumber slice. Start forming the envelopes.
