This one started as a “Just a Bite” moment and honestly it has become one of my favorite little brie projects. It looks way fancier than it is, and I love baking it right in the crate because it gives that rustic, melty vibe without any extra effort. The prosciutto gets crispy, the fig jam warms up, and the whole thing just feels fun to pull out of the oven. As the self-proclaimed brie queen, you know I had to do it.

Prep Your Ingredients: Baked Brie Appetizer


The Brie

Brie Wheel | Parchment | Brie Crate

Start your prep by removing the wheel from its wooden crate. Flip the bottom piece over so it becomes the base, then fit the lid underneath as a second layer for extra support. Cut a round of parchment slightly larger than the brie and set it inside the crate base so the cheese lifts out easily after baking. Place the brie on top.

Score the top with shallow cuts in straight lines, stopping before you reach the edges so the cheese stays contained. Use the tip of the knife to lift out just the thin layer of rind inside those scored sections, creating small pockets for the jam.

I’m using the Isigny Ste Mère double cream brie from Whole Foods, but any wheel that comes in a crate will work. If you can’t find one, a small baking dish that fits the brie snugly will do the job. This part can be prepped ahead as long as the brie is well-covered and kept in the fridge.


The Spiced Fig Jam

Fig Jam | Smoked Paprika | Chipotle Powder

Stir the jam with the spices until smooth and evenly combined. Set a piping bag or small zip-top bag inside a cup, fold the edges over the rim, and spoon the mixture in so you can fill it neatly without making a mess. You can prep this mixture a day ahead and keep it covered in the fridge.


The Prosciutto Topping

Slice or tear the prosciutto into small pieces so it nests easily into the scored areas of the cheese. Keep the pieces on the smaller side to help them crisp evenly in the oven. If prepping ahead, cut the prosciutto and store it in an airtight container in the fridge.


Finishing Touches

Honey | Chives

Have your honey ready so you can drizzle it the moment the brie comes out of the oven. Chop the chives right before serving so they stay bright and fresh. You can set everything out ahead of time, but wait until the very end to chop the chives so they don’t dull.

Ingredient Swaps

  • Brie: If you can’t find a brie wheel with a crate, use any double or triple cream brie (just bake it in a small dish that hugs the cheese). Camembert also works and melts beautifully.
  • Fig Jam: Apricot jam, mixed berry jam, blackberry jam all balance the salty prosciutto really well. If you want it punchier, try hot honey or a berry jam mixed with a splash of balsamic.
  • Prosciutto: Serrano ham, or even very thin-cut bacon work here. If you want it vegetarian, skip the cured meat and pile on toasted nuts for crunch.
  • Spices: No chipotle? Use cayenne or Aleppo pepper for heat. Smoked paprika can be swapped for regular paprika plus a tiny drop of liquid smoke if you really want the smoky note.

Ingredients 

  • 12½ oz brie wheel, in crate
  • cup fig jam
  • ½ tsp chipotle powder
  • ½ tsp smoked paprika
  • 4 oz prosciutto, sliced
  • honey, for drizzling
  • chives, chopped, for topping

Instructions 

  • Preheat your oven to 400°F.
  • Prep the Brie: Cut a round piece of parchment paper about 1 inch larger than the brie. Place the brie on top of the parchment and press the whole thing into your brie crate. Set that into the top crate so that it is doubled up and the cheese is fully supported.

  • Score the Brie: Using a sharp knife, carefully cut shallow slits across the top of the brie, stopping before you reach the edges so the cheese stays contained while baking. Gently remove just the rind from inside the slits to create space for the spiced fig jam.
  • Spiced Fig Jam: In a small bowl, mix the fig jam, chipotle powder, and smoked paprika until fully combined. Spoon or pipe the spiced fig jam into each slit.
    ⅓ cup fig jam, ½ tsp chipotle powder, ½ tsp smoked paprika
  • Prosciutto Topping: Cut the prosciutto into small pieces and gently press it into the jam-filled slits with the back of a knife.

  • Bake and Finish: Place the brie and crate on a small baking sheet and bake for 25 to 35 minutes until the prosciutto is deeply golden and the cheese is melted but still holding its shape in the crate. Remove from the oven, drizzle with honey and finish with freshly chopped chives before serving.
