When you slice into this beauty, the warm, melty brie oozes out just begging to get scooped up. One bite and this will become a holiday tradition that you look forward to every year!

Why You’ll Love Baked Brie and Preserves

This appetizer is the perfect harmony of sweet, savory and rich flavors with a touch of spice that feels like a warm hug in every bite. The creamy brie melts into a buttery goodness that is beautifully complimented by the crispy, golden puff pastry. The sweet and smokey shallot fig jam brings a savory depth with just the right amount of kick when you add the salsa macha. Just trust me on this, whoever takes a bite of this will certainly be closing their eyes to savor the moment and you will not regret it!

How to Prepare Baked Brie and Preserves

🥓 Sautee your bacon to render the fat. Add in shallots. Sautee until the bacon gets crispy and shallots get jammy.

🍯 Add in honey and salsa macha. Mix together. Cook for 1 min.

🧂 Add in preserves and pinch of salt. Turn heat off.

🫓 Roll out puff pastry and cut out a circle.

🧀 Score your brie. Add the jam to the center of the puff pastry and place the brie scored side down.

🥚 Wrap it and seal the edges VERY WELL with eggwash. Tie your brie with 4 pieces of kitchen twine all around to shape pumpkin. Tie twine at the top. Brush with eggwash, trying to avoid the twine.

🎛️ Bake at 400°F for 30-35 min until golden.

🎃 Add a sage leaf. Serve with bread, apples and pears.

Substitutions and Variations

  1. You can substitute the bacon strips with prosciutto if you prefer.
  2. If you’re not a fan of fig, you can use apricot or peach preserves instead.
  3. Can’t find salsa macha? That’s okay. You can substitute it for chili crisps.
  4. If you’re out of eggs you can use milk as an egg wash instead.

Chef’s Tip

If you want the brie to be a little less gooey, you can always pop the brie in the freezer for 15 minutes before wrapping.

Can I make this recipe ahead?

This is my most commonly asked question because during the holidays especially, people have a lot going on. And I have good news, the answer is yes! You can completely assemble the brie up until the egg wash. Wrap it really well and refrigerate up to 1 day beforehand. When it’s time to bake, brush it with the egg wash and bake as directed. Enjoy.

Can I omit the bacon for a vegetarian option?

Absolutely! If you want a vegetarian version it is still delicious leaving it out!

How do I know when the baked brie is done?

Just make sure you bake at 400°F for 30-35 minutes. When it is until golden on the outside the inside will be perfect.

Equipment

  • Butcher's twine
  • Rolling Pin

Ingredients 

  • 1 brie wheel
  • 1 puff pastry sheet
  • 1 small shallot, finely chopped
  • 2 bacon strips, finely chopped
  • 1/4 cup fig preserves
  • 1 tbsp salsa macha or chili crisp
  • 1 tbsp honey
  • 1 pinch of salt
  • 1 egg, beaten

Instructions 

  • Sautee your bacon on low for 6-7 min to render the fat. Raise heat to medium and add in shallots. Sautee until the bacon gets crispy and shallots get jammy.
  • Add in honey and salsa macha. Mix together and cook for 1 min.
  • Add in preserves and pinch of salt. Turn heat off.
  • Roll out puff pastry and using a round dinner plate cut out a circle.
  • Score your brie.
  • Add the jam to the center of the puff pastry and place the brie scored side down.
  • Wrap it and seal the edges VERY WELL with eggwash.
  • Tie your brie with 4 pieces of kitchen twine all around to shape pumpkin, as shown in the video. Tie twine at the top so you can remove easier.
  • Brush with eggwash, trying to avoid the twine.
  • Bake at 400°F for 30-35 min until golden.
  • Add a sage leaf.
  • Serve with bread, apples and pears.
