This salad truly is freaking delicious! It’s one of those recipes in which simplicity is key. It’s so fresh, and easy. I like to make it when I want a quick light meal, or when I am hosting!

How To Prepare Cucumber Fennel Salad

🥒 First, slice the cucumbers and quarter those slices.

🥬 Secondly, thinly slice the fennel with a mandolin or potato peeler.

🍏 Cube the apple (skin on) in tiny cubes.

🍋 Whisk together the honey, dijon, lemon juice, seasoned salt and olive oil.

💚 Lastly, combine the cucumber, fennel, apple, chives and sesame seeds in a bowl. Then, add in the dressing. Let it sit for 15-20 minutes.

Substitutions and Variations

  1. You can use agave nectar instead of honey. Personally I don’t love it with maple syrup but feel free to give it a shot.
  2. I used green apples, because they are a bit more acidic and works better with this recipe, but you can use your apple of choice!
  3. You can use Persian or regular cucumbers instead of English cucumber.
  4. I used chives but herbs are always very easy to swap for your favorite ones!

I use Peg’s Seasoned Salt. I highly recommend it!

Can I use Fuji apples instead?

You can use any apple of your choice. Personally, I prefer green apple for this recipe, because they are a bit more acidic.

Can I use regular cucumbers?

Yes of course! You can use Persian cucumbers as well instead of English cucumbers.

What dijon mustard do you use?

I use Grey Poupon Dijon Mustard.

Ingredients 

  • 2 English cucumbers
  • 1 Fennel bulb, large
  • 2 Green apples, small
  • 3 tbsp Chives
  • 1 tbsp Black sesame seeds
  • 1 tbsp Sesame seeds, toasted
  • 1 tbsp Honey
  • 2.5 Lemons, juice, fresh
  • 2 tsp Dijon mustard
  • 1/4 cup Olive oil, plus 2 tbsp
  • Seasoned salt , to taste
