This salad truly is freaking delicious! It’s one of those recipes in which simplicity is key. It’s so fresh, and easy. I like to make it when I want a quick light meal, or when I am hosting!
How To Prepare Cucumber Fennel Salad
🥒 First, slice the cucumbers and quarter those slices.
🥬 Secondly, thinly slice the fennel with a mandolin or potato peeler.
🍏 Cube the apple (skin on) in tiny cubes.
🍋 Whisk together the honey, dijon, lemon juice, seasoned salt and olive oil.
💚 Lastly, combine the cucumber, fennel, apple, chives and sesame seeds in a bowl. Then, add in the dressing. Let it sit for 15-20 minutes.
Substitutions and Variations
- You can use agave nectar instead of honey. Personally I don’t love it with maple syrup but feel free to give it a shot.
- I used green apples, because they are a bit more acidic and works better with this recipe, but you can use your apple of choice!
- You can use Persian or regular cucumbers instead of English cucumber.
- I used chives but herbs are always very easy to swap for your favorite ones!

- 2.5 Lemons, juice, fresh
- 2 tsp Dijon mustard
- 1/4 cup Olive oil, plus 2 tbsp
- Seasoned salt , to taste
Instructions
