Turkish Eggs (çilbir) with a few twists. I used @IcelandicProvisions Plain Skyr because it is so smooth & creamy that it pairs perfectly with the spicy butter. The 30oz size is perfect to keep in your fridge to incorporate into recipes. @IcelandicProvisions Skyr is an Icelandic style yogurt that is made with just 2 ingredients: farm fresh milk and Certified Heirloom Icelandic Cultures! You can find it in the yogurt aisle at your local grocery store.

I like serving it with 2 poached eggs but you can do 3!

Turkish Eggs

Turkish Eggs (çilbir) with a few twists. I used @IcelandicProvisions Plain Skyr because it is so smooth & creamy that it pairs perfectly with the spicy butter. The 30oz size is perfect to keep in your fridge to incorporate into recipes. @IcelandicProvisions Skyr is an Icelandic style yogurt that is made with just 2 ingredients: farm fresh milk and Certified Heirloom Icelandic Cultures! Ingredients 

  • 1 cup Icelandic Provisions Plain Skyr
  • 1 small garlic clove
  • 3 tbsp chives
  • 1 lemon, zest
  • Salt and pepper to taste
  • Pinch of Turkish cumin
  • 1/2 tbsp olive oil
  • 4-6 large eggs
  • 4-5 tbsp unsalted butter
  • 1-2 tbsp salsa macha or chili crisp
  • 1/2 tbsp smoked paprika
  • 1.5 tsp aleppo pepper
  • 1/2 tsp chipotle powder
  • Fresh dill
  • Za’atar to taste

Directions 

  • Add the skyr to a bowl, grate 1/2 of the garlic or the whole thing if you like it garlicky
  • Add the lemon zest, 2 tbsp of the chives, pinch of cumin, salt, pepper and olive oil. Mix well
  • Add the butter to a preheated saute pan and brown it slightly, about 3-4 min on med
  • Add salsa macha, aleppo pepper, smoked paprika and chipotle powder
  • Add salt/pepper to taste
  • Crack your eggs onto a strainer to get rid of the loose whites and add to a pot of very low simmering water
  • Cook until set, I do 3 min
  • Divide the skyr onto 2 plates, add 2-3 eggs per plate
  • Top with the butter, some za’atar, the fresh dill and remaining chives
