We are at the beginning of Dia De Los Muertos 💃 and I’ve been missing my great-aunt (almost grandma) a lot. She was a true tequila lover and one of my favorite people. It is tradition to prepare food and drink that our loved ones would have loved, so this Spiced Pear Tequila Sour is for her ♥️

This tequila sour has such a warm cozy element to it because of the spiced pear syrup. The egg whites create a silky frothy layer on top. This cocktail is slightly sweet and and has an earthy depth that would have made my Great-Aunt Norma proud ☺️
How To Prepare Tequila Sour
Spiced Pear Syrup
🍐 Add everything for the spiced pear syrup to a saucepan and let it simmer until reduced by half mashing the pear with a wooden spoon. Let cool. Strain it, pressing as much of the pear as you can through the strainer.
Tequila Sour
🍹 Add your tequila, pear syrup, lemon, bitters and egg white to a shaker. Dry shake for 10-15 seconds. Add ice and shake for another 45-60 seconds. Divide into 2 glasses and top with the dehydrated pear.

Substitutions for Tequila Sour
- If you want a cocktail, you can always use a non alcoholic tequila.
- You can substitute the egg whites for foaming bitters.
- For a less sour taste, you can swap out the lemon juice for orange juice.
Variations for Tequila Sour
- No Egg White Variation: Just skip it, the egg whites don’t affect the taste so skipping this step is totally okay if you’d prefer it.
- Maple Pear Tequila Variation: Swap the sugar for maple syrup for warm cozy sweetness that compliments the pear very nicely
- Smokey Mezcal Pear Sour Variation: Use Mezcal instead of tequila to add a smokey and earthy taste.

Yes and it’s actually very common in mixology. When using fresh or pasteurized egg whites, the risk is very low and if you are still worried about it, look for pasteurized egg whites at the store.
I used Teremana Tequila Reposado, but your blanco or reposado tequila of your choice will work great.
Certainly, the egg whites just at the frothy texture at the top and doesn’t affect the taste so if you choose not to use them, you’ll still get the same great taste!
