Caramel Apple Bread Pudding👌🏻🍎  Buttery brioche with caramel & Extra Creamy Vanilla Bean Skyr makes for a sublime combination. Apple desserts always remind me of the snow white movie lol. I’ve been re-watching Once Upon a Time recently and I got a little bit of inspiration from Regina’s apple pie.

Caramel Apple Bread Pudding… It’s nutty, buttery, and delicious! I love bread puddings of any kind, but using brioche makes it even better, because it has a sweeter taste if that makes sense.

How To Prepare Caramel Apple Bread Pudding

🍊 First, whisk together the vanilla bean skyr, condensed milk, zest of 1 orange, heavy dash of cinnamon, eggs, 1 cup brown sugar, dash of salt and half & half.

🍞 Secondly, cube your brioche and add to the wet mixture. Let it sit for 15-20 minutes. Add a bit more half and half if needed.

🍎 Then, add in the apple and walnuts to the bread pudding.

🥘 Add the rest of the sugar to a saucepan with the apple juice, zest of 1 orange and cinnamon. Simmer until it thickens (about 5-7 min). Turn heat off and whisk in butter.

🌟 Add the bread pudding to a baking dish and drizzle caramel on top.

🔥 Bake covered at 375 F for 30 minutes and uncovered for 15 minutes.

❤️ Lastly, top it with Skyr and apple caramel.

Substitutions and Variations

  1. You can use vanilla yogurt instead of Skyr.
  2. You can use any nut of your choice instead of walnuts.
  3. You can use ciabatta or any bread of choice instead of brioche.

Ingredients 

  • 14 oz brioche loaf, about 5 cups, cubed
  • 4 oz Skyr, Icelandic Provisions Extra Creamy Vanilla Bean Skyr plus more for topping
  • 1/3 cup condensed milk
  • 2 eggs
  • 1 3/4 cup half and half
  • 1 tsp vanilla bean paste
  • Cinnamon, to taste
  • 1 apple, cubed
  • 1/3 cup walnuts, chopped
  • 2 oranges, zest
  • 1 3/4 cup brown sugar
  • 3/4 cup apple juice, I used fresh squeezed
  • 2 tbsp butter
  • ginger, just a dash
  • salt, just a pinch
