Who doesn’t love delicious burrata 🙋‍♀️ Stracciatella cheese is the filling of burrata, and making this recipe yourself is super easy and way less expensive! It is basically just pulled mozzarella curds soaked in cream. This is a little shortcut that works if you don’t want to make mozzarella from scratch or can’t find mozzarella curds like me.


How to Prep

4 – 24 hours ahead: Shred your mozzarella into very thin strands and then transfer to a container with cream and a pinch of salt. Mix, cover and put in the fridge for at least 4 hours. This recipe really needs time to soak for the stracciatella cheese to blend and marinate so make sure you have enough time for this.

Prep Work: You can make the chili crisp the day before.

Chop:

  • garlic cloves: 5-6, thinly sliced
  • marcona almonds: ⅓ cup, finely chopped
  • fennel: ½ head, thinly shaved bulb + some of the greens
  • ciabatta: 1 loaf, slice

Gather

  • olive oil: ⅓ cup 
  • calabrian chiles: ⅓ cup 
  • dried oregano: ½ tbsp 
  • dried parsley: ½ tbsp 
  • dried basil: ½ tbsp 
  • cane sugar: 1 tsp 
  • tamari: 1 tsp 
  • flaky salt: to taste
  • black pepper: to taste

Substitutions

  • If you are trying to make this last minute and don’t have time to make this stracciatella cheese recipe, you can always buy burrata and use that. It will be more expensive but quicker.
  • You can use your favorite herbs instead of the ones I picked.
  • You can use any nuts of your choice instead of marcona almonds.

🔥Chef Nadia’s Tip🔥

Make sure you let the mozzarella strands and cream sit in the fridge for a minimum of 4 hours because this recipe really needs time. The stracciatella cheese needs to blend and marinate.

Ingredients 

Stracciatella

  • 8 oz fresh mozzarella
  • 8-9 oz heavy cream
  • 1 pinch salt

Chile Crisp

  • cup olive oil
  • 5-6 garlic cloves, thinly sliced
  • cup calabrian chiles
  • ½ tbsp dried oregano
  • ½ tbsp dried parsley
  • ½ tbsp dried basil
  • 1 tsp cane sugar
  • cup marcona almonds, finely chopped
  • 1 tsp tamari
  • ½ head fennel, thinly shaved bulb + some of the greens
  • flaky salt , to taste
  • black pepper
  • Ciabatta

Instructions 

  • Stracciatella: Shred the mozzarella into super thin strands. Add it to a bowl and mix with heavy cream and a pinch of salt. Cover and let chill in the fridge for at least 4 hours or overnight.
  • Chile Crisp: To a pan, add olive oil and preheat for 2 minutes on medium. Lower to medium-low and add garlic. Crisp up until lightly golden so they don’t burn. Remove garlic from oil.
  • To a bowl add Calabrian chiles, oregano, parsley, basil, sugar, almonds and tamari. Then, add in the sizzling oil.
  • Chop the golden garlic and add in to the bowl.
  • Toast your ciabatta slices in the pan with a little olive oil.
  • Add the stracciatella to the bowl you will be serving it in, spoon on the Chile Crisp, add shaved fennel + some of the greens. Add basil leaves, a little flaky salt and black pepper. Serve with the toasted ciabatta. Enjoy!
