Soups are my comfort food.. I eat them all year long. It can be 90°F outside, and I will still eat soup.

PS.. I salt at the end because my broth is usually salted.

Why You’ll Love Nordstrom Tomato Soup

This is one of the coziest and most delicious soups. It’s creamy, and perfect. It’s very easy to make, and the parmesan toasties are a MUST. When my mom, my sister and I used to go shopping, we would always stop at the Nordstrom cafe for a quick tomato soup and it reminds me of those good times. That’s why this recipe holds a special place in my heart.

How To Prepare Nordstrom Tomato Soup

Nordstrom Tomato Soup

🥕 In a bit of olive oil, sauté the onion and carrot on medium heat for 7-8 minutes. Stir often.

🍅 Add in the tomatoes and dry basil. Sauté another 10 minutes.

🔥 Add in the broth and let simmer for 10 minutes.

❤️ Blend soup until smooth, season to taste. Add in cream and turn heat off.

🌿 Serve with fresh basil and that’s it.

Parm Toasties

🧈 Spread butter onto the bread, sprinkle garlic powder on both sides and completely coat in the Parmigiano. Bake at 350°F for 8 minutes per side or until golden.

Substitutions and Variations

  1. For the parmesan toasties, you can use any cheese of your choice instead of parmesan.
  2. You can use any herbs of your choice instead of basil.

Chef’s Tip

Make sure you sauté the carrot and onion. It truly makes a difference.

Ingredients 

Nordstrom Tomato Soup

  • 3 large carrots, peeled and cubed
  • 1 large onion, rough chop
  • 8-9 cup chicken broth, or vegetable broth
  • 2 cups heavy cream
  • 2 (28) oz cans of tomatoes, bianco di napoli or san marzano
  • 1.5 tbsp dried basil
  • Fresh basil, for topping
  • Salt and pepper , to taste

Parm Toasties

  • Ciabatta, or baguette, very thinly sliced
  • Garlic powder, to taste
  • Butter, room temperature
  • Parmesan, grated
