Nordstrom Tomato Soup 🍅 This is a very nostalgic and comforting soup for me because growing up I ate it with my mom and sister ALL the time and trust me… this recipe is very similar to the OG! It can be 90°F outside and I will eat soup, it’s my comfort food, so I eat it year-round! P.S. I salt at the end because my broth is usually salted.


How to Prepare

A little prep goes a long way – get everything chopped and measured ahead of time and this cozy tomato soup will come together flawlessly.

Chop, Slice, Grate:

  • Large Onion: 1, rough chop
  • Large Carrots: 3, peeled and cubed
  • Fresh Basil: chopped, for topping
  • Ciabatta or Baguette: very thinly sliced
  • Parmesan: freshly grated

Gather:

  • Olive Oil: 1 tbsp
  • Cans of Tomatoes: 2, 28 oz, good quality like Bianco di Napoli or San Marzano
  • Dried Basil: 1 ½ tbsp
  • Chicken Broth or Vegetable Broth: 8-9 cups
  • Salt and Pepper
  • Heavy Cream: 2 cups
  • Butter: room temperature
  • Garlic Powder: to taste

Substitutions

  • For the parmesan toasties, you can use any cheese of your choice instead of parmesan.
  • You can use any herbs of your choice instead of basil.
  • Roast your own tomatoes if you would like to for this soup.

  • Sauté patiently – This step adds so much depth and it truly makes a difference.
  • Choose the right canned tomatoes – Since this is the core of the soup, it makes a huge difference when you use a good quality canned tomato. I recommend either Bianco di Napoli or San Marzano.

What canned tomatoes do you use?

I use Bianco Di Napoli or San Marzano.

Can I use fresh tomatoes instead of canned?

You can but make sure you roast them first. Use about 4 lbs of fresh tomatoes and roast them at 400°F for 20-45 minutes (depending on the size/variety you choose) with olive oil and salt.

Is this tomato soup vegetarian?

It is! Just make sure you use the vegetable broth and a vegetarian parm, or just swap the cheese for another kind.

How can I make this vegan?

Make sure you use the vegetable broth. Swap the heavy cream for unsweetened cashew cream. For the toasties, use olive oil instead of butter and your choice of freshly grated cheese!

A copycat of Nordstrom’s tomato basil soup made with whole peeled tomatoes, carrots, and onion simmered in broth, blended smooth, and finished with heavy cream. Served with garlic parmesan toasts baked until crisp.

Ingredients
 

Nordstrom Tomato Soup

  • 1 tbsp olive oil
  • 1 large onion, roughly chopped
  • 3 large carrots, peeled and cubed
  • 1 1/2 tbsp dried basil
  • 2 (28 oz) cans whole peeled tomatoes, Bianco DiNapoli or San Marzano
  • 8 to 9 cups low-sodium chicken broth, or vegetable broth
  • salt, to taste
  • black pepper, to taste
  • 2 cups heavy cream
  • fresh basil, for topping

Parm Toasties

  • 1 ciabatta or baguette, very thinly sliced
  • butter, room temperature
  • garlic powder, to taste
  • parmesan, freshly grated

Instructions

  • Preheat the Oven: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Sauté the Vegetables: Heat the olive oil in a large dutch oven over medium heat. Add the onion, carrots, and dried basil and cook 7 to 8 minutes, stirring often. Add the tomatoes cook another 10 minutes.

  • Simmer the Soup: Add the broth, bring to a simmer, and simmer 10 minutes.
    8 to 9 cups low-sodium chicken broth
  • Make the Parm Toasties: While the soup simmers, spread butter on both sides of each bread slice and sprinkle both sides with garlic powder. Press parmesan onto both sides to fully coat. Arrange in a single layer on the baking sheet and bake 6 to 8 minutes. Flip and bake 6 to 8 minutes more, until the parmesan is golden and the bread is crisp.

  • Blend and Finish: Blend the soup with an immersion blender until smooth. Season with salt and pepper. Stir in the heavy cream and remove from the heat.

  • Serve: Ladle into bowls, top with fresh basil, and serve with the parm toasties.
