Nordstrom Tomato Soup 🧡 A very nostalgic and comforting soup for me, and trust me… this is very similar to the OG!Soups are my comfort food.. I eat them all year long. It can be 90F outside, and I will still eat soup. PS.. I salt at the end because my broth is usually salted.
2 (28)ozcans of tomatoesbianco di napoli or san marzano
1 ½tbspdried basil
8-9cupchicken brothor vegetable broth
salt and pepper to taste
2cupsheavy cream
fresh basilfor topping
Parm Toasties
Ciabattaor baguette, very thinly sliced
Butterroom temperature
Garlic powderto taste
Parmesanfreshly grated
Instructions
Nordstrom Tomato Soup
In a pan, add a little olive oil and sauté the onion and carrot on medium-heat for 7-8 minutes, stirring often.
Add the tomatoes and dry basil. Sauté another 10 minutes.
Add the broth and let simmer for 10 minutes. While this simmers, make your Parm Toasties.
With an immersion blender, blend the soup until smooth. Add salt and pepper to taste. Turn off the heat and add cream.
Serve topped with fresh basil and scoop with your crispy parm toasties.
Parm Toasties
Preheat your oven to 350°F.
Take your ciabatta slice and spread butter and sprinkle with garlic powder onto both sides. Completely coat both sides of the bread with parmigiano. Bake for 8 minutes per side or until golden.
