Spicy Tahini Roasted Garlic Noodles

Spicy Tahini Roasted Garlic Noodles… These are SO good! The flavors here turned out amazing.

Ingredients 

  • 2 packages plain ramen noodles
  • 1/3 napa cabbage, shaved
  • 1/4 cup scallions
  • 2 tbsp cilantro
  • 1/3 cup tahini
  • 2.5 tsp maple syrup
  • 1 tbsp tamari
  • 2 tsp rice vinegar
  • 2 tsp sesame oil
  • 1.5 tbsp gochujang
  • 1 tbsp shichimi togarashi, start with less if you don’t want it as hot
  • 1 head purple garlic, cut the top off

Directions 

  • Drizzle some olive oil to the garlic head with some salt, cover in foil and roast at 400F for 1 hour
  • Shave the cabbage and remove the excess moisture REAL well
  • Squeeze the garlic and form a paste with the back of a knife
  • Mix the garlic, tahini, maple syrup, rice vin, tamari, shichimi togarashi, gochujang and sesame oil. It will be thick and that is ok, you’ll add noodle water
  • Preheat a pan on high for 2 min, add a bit of sesame or olive oil and sautee until charred
  • Bring water to a boil, add salt and your ramen. They cook super fast, like 2-3 min max
  • Add noodle water to the sauce until thin enough. Add salt/pepper if needed
  • Add noods to the cabbage with the sauce, scallions and cilantro. Mix and serve
  • Top with more shichimi togarashi, scallions and lime
