Why You’ll Love Garlic Noodles

This is a low effort high reward meal. Sooo easy and delicious! These are garlicky, creamy, and a bit spicy. This is one of my go to late dinner meals, because it is very filling and they are quick to make.

How To Prepare Garlic Noodles

🧄 First, drizzle some olive oil to the garlic head with some salt, cover in foil and roast at 400F for 1 hour.

🥬 Secondly, shave the cabbage and remove the excess moisture REAL well.

🔪 Then, squeeze the garlic and form a paste with the back of a knife.

🌶 Mix the garlic, tahini, maple syrup, rice vinegar, Tamari, Shichimi Togarashi, Gochujang and sesame oil. It will be thick and that is okay, you’ll add noodle water.

🔥 Preheat a pan on high for 2 minutes. Then, add a bit of sesame or olive oil and sauté until charred.

💧 Bring water to a boil, add salt and the ramen. They cook super fast, like 2-3 minutes maximum.

🧂 Then, add noodle water to the sauce until thin enough. Add salt/pepper if needed.

🌿 Add noodles to the cabbage with the sauce, scallions and cilantro. Then, mix and serve.

🍋 Lastly, top with more Shichimi Togarashi, scallions and lime.

Substitutions and Variations

  1. You can adjust the amount of gochujang to your desired level of heat.
  2. Herbs and toppings are very easy to swap out for your favorite ones or which ever ones you have on hand.
  3. You can use regular white garlic instead of purple.

Chef Nadia’s Tip

Make sure you don’t skip the roasting of the garlic. It makes a big difference in flavor.

Ingredients 

  • 2 packages ramen noodles, plain
  • 1/3 napa cabbage, shaved
  • 1/4 cup scallions
  • 2 tbsp cilantro
  • 1/3 cup tahini
  • 2.5 tsp maple syrup
  • 1 tbsp tamari
  • 2 tsp rice vinegar
  • 2 tsp sesame oil
  • 1.5 tbsp gochujang
  • 1 tbsp shichimi togarashi, start with less if you don’t want it as hot
  • 1 head purple garlic, cut the top off
