Sizzling Oil Tomatoes & Burrata

Sizzling Oil Tomatoes & Burrata…today I celebrated 400k and I couldn’t be more grateful for you…Obviously celebrating with burrata given that it was the first recipe I ever shared on video form!

Ingredients 

  • 1 pint yoom tomatoes, quartered
  • 6 basil leaves, chiffonade
  • 3 tbsp pistachios, chopped
  • 1 small garlic clove, grated
  • 1 lemon, zest
  • 1 tsp honey
  • 1 tbsp crushed red peppers
  • 3 tbsp parmigiano reggiano, grated
  • Salt/pepper to taste
  • 1/4 cup olive oil
  • 2 burrata balls
  • Crusty bread

Directions 

  • Combine the tomatoes, pistachio, parmigiano, lemon zest, garlic, salt, pepper, crushed red peppers and honey in a bowl
  • Heat up the olive oil in a pan until fragrant and the bottom of a wooden spoon bubbles
  • Pour hot oil over the tomato & pistachio mixture
  • Slice the burrata balls in half, expose the stracciatella and pour the tomato mixture
  • Enjoy with crusty bread
