Why You’ll Love Pesto Caprese

This was fresh and sooo delicious! I made it for my family the other night, and they LOVED. The panko on the tomatoes bring in a crispy element and it is epic! It’s very easy and quick to make, which makes it perfect for your next get together. The pesto adds that herby taste and elevates the recipe even more.

How To Prepare Pesto Caprese

🌟 First, in the tbsp of olive oil toast the panko until golden.

🍅 Secondly, slice your tomatoes into rounds, then in half.

🧀 In a food processor add remaining oil, basil, Parmigiano, chives, lemon zest and salt. Then, process until super smooth, about 2-3 minutes.

🌿 Arrange the tomatoes on a plate with basil leaves. Then, drizzle some of the herby oil.

❤️ Lastly, add burrata in the center with more herb oil and add panko to the tomatoes.

Substitutions and Variations

  1. There aren’t really substitutions for this recipe, but herbs are always very easy to swap for your favorite ones or which ever ones you have on hand.
  2. You can use any tomatoes of your choice instead of heirloom.

Ingredients 

  • 2 large heirloom tomatoes
  • 1/4 cup panko
  • 1/3 cup olive oil, + 1 tbsp
  • 10 basil leaves, plus more for arranging on the tomatoes
  • 3 tbsp chives
  • 2 tbsp parmigiano
  • 1 lemon zest
  • Seasoned salt , to taste
  • 1 burrata ball
