Pesto Caprese ❤️ A while back I started sharing ways to twist classic dishes and this was my caprese rendition. I’ll say, it is SO good!

Ingredients
2
large heirloom tomatoes
1/4
cup
panko
1/3
cup
olive oil
+ 1 tbsp
10
basil leaves
plus more for arranging on the tomatoes
3
tbsp
chives
2
tbsp
parmigiano
1
lemon zest
Seasoned salt
to taste

burrata ball
Instructions
First, in the tbsp of olive oil toast the panko until golden.
Secondly, slice your tomatoes into rounds, then in half.
In a food processor add remaining oil, basil, Parmigiano, chives, lemon zest and salt. Then, process until super smooth, about 2-3 minutes.
Arrange the tomatoes on a plate with basil leaves. Then, drizzle some of the herby oil.
Lastly, add burrata in the center with more herb oil and add panko to the tomatoes.
