Roasted Garlic Potato Gratin

Roasted Garlic Potato Gratin…when it comes to side dishes, very few compare to this one! It is creamy, cheesy and the bits of crispy potato skins are what dreams are made of.

Ingredients 

  • 3 lb potatoes, total of about 9-12 yukon golds
  • 1 large garlic head
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 6 oz cream cheese
  • 1/4 tsp nutmeg
  • 1/4 tsp smoked paprika
  • 1/2 tsp dried parsley
  • 1/2 tsp onion powder
  • 2 cups grated gruyere
  • 1/2 cup grated parmigiano reggiano, plus more for topping
  • 1 tsp butter
  • Chives to taste
  • Salt and pepper to taste

Directions 

  • Cut the top off the garlic, drizzle some olive oil. Wrap in foil and roast at 375F for 1 hour
  • Blend together the milk, roasted garlic, cream cheese, spices, 1/4 cup gruyere, parmigiano and cream
  • Slice potatoes pretty thinly but not paper thin so they hold their shape
  • Butter a baking dish and layer the potatoes as shown in the video
  • Drizzle the cream over them and add the cheese
  • Bake covered in foil at 400F for 45 min (in the middle rack)
  • Remove foil bake uncovered for 15-20 more minutes
  • Top with chives, black pepper and parm
