There is literally nothing better than the smell of onions slowly cooking in butter and then simmering in a homemade chicken stock with rosemary and sage. This Caramelized Onion Gravy Recipe will upgrade your holiday recipes to the next level, or any recipe for that matter!

How To Prepare Caramelized Onion Gravy

🧅 Slice your onion and shallots into thin strips. You can use a mandolin to make this go faster and have more uniform slices.

🧄 Preheat a pan on low heat. Add oil. Add the onions and shallots. Let them caramelize for a good 45-50 minutes, mixing every couple minutes. Add red wine vinegar and soy sauce. Grate the garlic and cook together another 2 minutes. Add rosemary and sage.

🧈 In another pan add the whipped brown butter and let it melt. Add the flour and cook together for 2-3 minutes. I like a thin onion gravy but if you want it thicker adjust the flour to 2.5-3 tbsp and add extra butter as well.

🔥 Warm your chicken stock and mix in your a bit at a time. Let it thicken and adjust seasonings to taste.

Substitutions for Caramelized Onion Gravy

  • This gravy is best with pan drippings but you definitely don’t need it! There are plenty of other ingredients that make it taste amazing so if you don’t happen to be cooking something that has drippings, don’t sweat it. I do have a recipe for homemade chicken stock that I love to make for this gravy and happen to have leftover drippings.
  • If you don’t have the whipped brown butter available, you can use just cold butter. It won’t have the same nutty flavor but it will be good.

Variations for Caramelized Onion Gravy

  1. Creamier Variation: Stir in a splash of heavy cream if you are looking for a creamier, more velvet gravy.
  2. Cheesy Variation: After adding your hot stock, you can add some grated parm or gruyére for a cheesy bite.
  3. Smoky Variation: Add some smoked paprika or liquid smoke for a little smoky pop.

Do not rush caramelizing your onions and shallots. I know it takes a long time but, trust me, it is worth it! If you don’t take your time you are not actually caramelizing them and the onion gravy won’t taste the same.

Recipes That Are Great With Gravy

Common Questions

Can I make this gravy ahead of time?

Yes! You can prepare this onion gravy, let cool and store in an airtight container in the fridge for up to 3 days. Reheat it on the stovetop and add a a splash of the chicken stock if it is too thick.

I like my gravy a little thicker, what should I do?

I like a thin gravy but if you want it thicker adjust the flour to 2.5-3 tbsp and add extra butter as well.

Can I freeze my gravy?

Sure, you can freeze it in an airtight container or in an ice cube tray for up to 3 months. Gently reheat it on the stove and add a little chicken stock if it is too thick.

  • 2 shallots
