How To Prepare

  • Get ahead on your leeks 🔪 To prep ahead for these Cheesy Jalapeño Smash Burgers, you can slice and rinse your leeks up to a day ahead. Dry and store them in the fridge wrapped in paper towels. This will cut down on your prep time and mess when you’re getting ready to make this dish.
  • Room Temp Brie → Melt Magic 🧀 Pull your brie out of the fridge 20-30 minutes before you’re ready to use it. It will melt faster and be creamier when placed on the hot patties.
  • Toast Your Buns! Always! 🍔 Don’t skip this step. It may not seem like a big deal but a toasted bun holds up much better to the creamy sauces and adds to that golden buttery flavoring giving it an amazing crunch that is worth the extra time!
  • Taste Your Dijonaise 🥣 Depending on your own tastes, you may want to add a little extra honey or dijon, so make sure you taste and adjust to your liking.

Substitutions and Variations

  • Substitutions
  • Brie → Camembert or Havarti will give you a similar creaminess with a different flavor profile for your burger.
  • Jalapeños → Fresno Peppers are a milder substitution for these smash burgers. Or you can just make sure to deseed the jalapeño the best you can.
  • Brioche Buns → Potato Buns or Pretzel Buns This will still give you a rich and delicious bun with different taste and texture.
  • Dijon Mustard → Whole Grain or Spicy Brown are great choices also depending on your tastes.
  • Variations
  • Veggie Variation → Swap your Jalapeño Smash Burgers for a portobello mushrooms or plant-based burgers.
  • Slider Variation → Use mini brioche slider buns and cut everything to size for a fun appetizer. You may want to do a single patty to keep the ratios correct but I’ll leave that up to you 😉
  • Kid-Friendly Variation → For you with the picky eaters out there! Swap your brie for a mild cheese like mozzarella, mild cheddar or Monterey Jack. Skip the jalapeños. Mix mayo with a little honey for a much lighter version of the sauce or just go with ketchup! If the leeks are a concern, serve them on the side so they can try them and you can always add them if they do like them.

These are, boldly…the best burgers I’ve put in my mouth. The spicy fresh jalapeños mixed with the melty brie and honey, then top your burger with crunchy leeks, it gives you a flavor pop that is unforgettable.

Equipment

Ingredients 

Jalapeño Burgers

  • 4 large jalapeño’s, sliced
  • 1 large leek, or 2 medium ones
  • Olive oil for frying
  • 4 Omaha Steak Smash Burgers
  • Salt and pepper, to taste
  • 4 thick slices of brie
  • 2 brioche buns
  • honey, to taste

Dijonaise

  • 2 tbsp mayo
  • 1 tbsp dijon mustard
  • 1 tsp honey

Sides

  • Kettle chips
  • Cornichons

Instructions 

  • Slice your jalapeños into thick slices. Preheat a pan for 2 minutes on medium high and add a bit of olive oil. Add you jalapeño slices in and give them a nice char.
  • On a cutting board, trim off the root end and the tough dark green tops. Peel away any loose outer layers. Slice the leek in half lengthwise. Lay each half flat-side down on the cutting board and slice into thin matchstick pieces. Rinse the sliced leeks in a bowl of cold water to remove all dirt. Drain and dry well.
  • Add the leeks to a cold pan with enough oil to cover. Place on high heat for 1 minute, then lower to low heat and let them get golden. Remove and set aside.
  • In a small bowl, mix your mayo, mustard and honey to make a dijonaise.
  • Add your patties to the preheated grill and season with salt and pepper to taste. Cook for 2½ minutes per side until you get the iconic caramelized edges. Top it with the brie and let it melt for a few seconds.
  • Grill the brioche buns.
  • Add the dijonaise on the bottom bun followed by one patty, jalapeños, honey, the other patty, more jalapeños, honey and then the crunchy leeks. Serve with your favorite kettle chips and cornichons and that is it! Enjoy!
