Lasagna Roll Ups ❤️ It is officially back to school and my days are crazy with work and my family. Lasagna is a favorite at my house, but it takes so long 😅 especially the sauce! I found a way to get it done in under 40 minutes using the NEW family size Marinara by Mezzetta and it is absolutely delicious. These lasagna roll ups are my kids favorite, they can eat it for days and not get tired of it.

Why You’ll Love Lasagna Roll Ups

Lasagna is such a cozy meal and apart from being super easy to make, they are delicious and like I mentioned you can get them done in under 40 minutes! The ricotta brings that rich creaminess to the dish and it’s epic. It’s cheesy, tomatoey, and absolutely delicious.

Substitutions

You can substitute the herbs for your favorite ones. You can also sub the mozzarella and parm for your cheese of choice. And if you want to make a vegetarian version, you could take out the meat, and add spinach!

Lasagna Roll Ups

Lasagna Roll Ups ❤️ it is officially back to school and my days are crazy with work and my family. Lasagna is a favorite at my house, but it takes so long 😅 especially the sauce! I found a way to get it done in under 40 min using the NEW family size marinara by Mezzetta and it is absolutely delicious.

Ingredients 

  • 1 lb ground beef
  • 1/4 onion, chopped
  • 1 garlic clove, minced
  • 1 tsp balsamic
  • 1-32 oz jar marinara by Mezzetta
  • 10 basil leaves, chiffonade
  • 1 tsp dried oregano
  • 8 oz ricotta
  • Pinch of nutmeg
  • 1/3 cup parmigiano reggiano, grated and more to taste
  • 9-12 lasagna noodles
  • Mozzarella to taste
  • Salt and pepper to taste

Directions 

  • In a preheated pan sautee the onion and garlic for 2 min, add in the beef and brown with salt, pepper, basil, oregano for 5 min on high
  • Add in 2 cups marinara, balsamic and simmer for 5 min. Mix the ricotta, parmigiano, nutmeg, salt and pepper
  • Boil the lasagna noodles until al dente. Spread ricotta over the noodles, add some of the meat and shredded mozz
  • Roll them up as shown in the video. Spread some marinara to the bottom of a baking dish
  • Add in the lasagna roll ups. Cover them with the rest of the marinara, top with mozzarella and a bit more parm. Bake at 400F for 20 minutes
