Why You’ll Love French Onion Soup Pasta
The flavors are UNREAL 🔥 It is SO rich, and perfect. It’s a hug in a bowl. It is very easy to make, and yes I know that the caramelizing of the onion takes a bit… but trust the process! The Parmigiano bread crumbs on the top… omg they bring in that touch of crispy to the dish and it is amazing.

How To Prepare French Onion Soup Pasta
🧅 First, slice the onions very thinly. Preheat a pan for 2 minutes on medium high. Then, add a tiny bit of olive oil and the onions. Lower heat to low an add a pinch of salt.
🦴 Secondly, let them caramelize for about 45 minutes, mixing them in between every little bit. I like adding 1 tbsp bone broth once or twice in the process to deglaze.
🌿 Then, add in balsamic, thyme, nutmeg, cayenne and Tamari. Cook for another 5 minutes.
🧀 Add your parmesan and baguette to a food processor with a pinch of salt and pulse until pulverized.
🌟 Add to a baking dish and drizzle with olive oil.
🔥 Bake at 350F for 12-15 minutes or until golden.
🍝 Bring your bone broth to a boil and add in your pasta. Cook until almost al dente.
❤️ Add the pasta and bone broth directly over the onions, add in gruyere and simmer for 2 min mixing to incorporate the cheese.
🧈 Lastly, turn heat off and add in butter. Mix and serve. Top with the breadcrumbs and chives.
Substitutions and Variations
- You can use any pasta of your choice instead of cavatelli.
- You can use any broth of choice, or water instead of bone broth.
- I topped with chives, but you can easily use any herbs you have on hand instead.
- As for the gruyere and parmesan, you can use any cheese of your choice instead, such as Comté.
Chef Nadia’s Tip
Don’t rush the caramelizing of the onions, I know the process can be a bit long but it is 100% worth it.
