Boozy Truffles…Bourbon & Pumpkin Pie Truffles to be exact here, I ordered a pumpkin and instead received a pumpkin pie sooo what else could I do?

PS: this is a GREAT way to use pumpkin pie leftovers btw! Mine were pretty Bourbon forward but could have handled more, you can start with 2 shots and adjust from there.

Bourbon & Pumpkin Pie Truffles

Boozy Truffles…Bourbon & Pumpkin Pie Truffles to be exact here, I ordered a pumpkin and instead received a pumpkin pie sooo what else could I do?PS: this is a GREAT way to use pumpkin pie leftovers btw! Mine were pretty Bourbon forward but could have handled more, you can start with 2 shots and adjust from there.

Ingredients 

  • 1 pumpkin pie
  • Bourbon, I did 3 shots, like 1.5 oz shots
  • Dark chocolate

Directions 

  • Cut up your pie into large chunks. Add it all to the food processor but reserve a bit of the crust for crumbling on top
  • Process for a few sec. Add in your bourbon, I would start with 1-2 shots and go from there. Adjust to your taste
  • Process until smooth. Let the mixture sit in the freezer for 1 hour
  • Form the balls and let them sit in the freezer for another hour
  • Smooth them out with your hands and let sit in the freezer for 30 minutes
  • Coat in dark chocolate and let sit in the freezer for 15-20 minutes
  • Top with the reserved crumbled crust and that’s it
  • Store in the fridge
