I was craving a recipe that was fresh and light and let me tell you, I couldn’t put this Creamy Ranch Cucumber Salad down. This is perfect for those hot summer days, having friends and family over or just if you want something nice and light for lunch!

Why You’ll Love Creamy Ranch Cucumber Salad
This Creamy Ranch Cucumber Salad doesn’t have your typical homemade ranch dressing recipe but trust me when I say, it is so good. The pepperoncini bring a mildly spicy, tangy with a tiny sweet note to the party while the sour cream, mayo and dill give you the classic ranch taste that you’re looking for with the fresh pop of the cucumbers.

How To Prepare Creamy Ranch Cucumber Salad
🌿 Chop the following very small: pepperoncini, chives, parsley and dill.
🥣 Mix the sour cream (since this is one of the main ingredients of this recipe, I recommend Shamrock Farms cause the taste is 👌), Japaese mayo, white pepper, vinegar, pepperoncini, pepperoncini brine, chives, dill, parsley and garlic powder. Add salt in the end to taste.
🥒 Slice your cucumber using a mandoline slicer. Alternatively you can use a knife. Just try to make the slices as uniform as possible.
🥗 Mix the dressing into the cucumber, top with extra herbs and black pepper.

Substitutions for Creamy Ranch Cucumber Salad
- If you don’t have Japanese mayo you can use regular mayo instead.
- English cucumbers will work if you can’t find Persian cucumbers.
Variations for Creamy Ranch Cucumber Salad
- Spicy Variation: Mix a little salsa macha in to taste if you want some kick.
- Tomato Variation: If you are a tomato fan, feel free to chop up some tomatoes and throw them in the mix. They go very well with the flavors in this dish.
- Peeled Variation: You do not have to peel your cucumbers at all, but if you are not a fan of cucumber skin, that is always an option.

A mandoline isn’t necessary but I recommend it to make sure your cucumber slices are uniform. I used me OXO Good Grips Chef’s Mandoline Slicer along with my Cut Resistant Gloves. They’re really great to make sure you don’t accidentally cut yourself!

You can make it about a day ahead of time. The flavors actually get better as the have time to marinate but you want to make sure that you eat it while the cucumbers are still crisp. That is why I don’t recommend longer than a day.

Creamy Ranch Cucumber Salad

Equipment
- Mandoline Slicer or knife
Ingredients
- 8-10 persian cucumbers
- ½ cup sour cream
- 3 tbsp japanese mayo
- 1½ tsp white wine vinegar
- pepperoncini, anywhere from 2 tbsp to ⅓ cup. Start off small and add to taste. I did a lot but that's not for everyone!
- 1 tsp pepperoncini brine
- 2 tbsp fresh chives, + more for topping
- 2 tbsp fresh dill, + more for topping
- 2 tbsp fresh parsley, + more for topping
- ¼ tsp white pepper
- ¼ tsp garlic powder
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Chop the following very small: pepperoncini, chives, parsley and dill.
- Mix the sour cream, mayo, white pepper, vinegar, pepperoncini, pepperoncini brine, chives, dill, parsley and garlic powder. Add salt in the end to taste.
- Slice your cucumber.
- Mix the dressing into the cucumber, top with extra herbs, black pepper and that is it.
