Chipotle Shrimp Tacos 🍤 ❤️ These are SO good and so easy! I like to call these “Quesatacos” because they are kind of a mix between a taco and a quesadilla.

Why You’ll Love Chipotle Shrimp Tacos
Tacos are one of my favorite meals and these ones were EPIC! They are cheesy, rich, flavorful and a bit spicy. These are honestly very easy to make and they make for a quick and easy lunch or dinner!
How To Prepare Chipotle Shrimp Tacos
🍤 First, chop the shrimp pretty small, and pat dry.
🧂 Secondly, add shrimp to a bowl with the mayo, paprika, oregano, coriander and seasoned salt. Mix well.
🔥 Preheat a pan with a bit of olive oil on high for 2 minutes. Then, brown shrimp for 2 minutes and remove from the pan.
🧄 Lower heat to medium low and add the onion and garlic. Cook until translucent. Then, add in chipotle adobo and cook for 2 minutes.
🍋 Raise the fire to medium, add shrimp back in and cook together for 1-2 minutes. Then, turn heat off, squeeze the lemon and add the butter.
🧀 Then, preheat another pan on high for 2 minutes, add the provolone followed by a tortilla and flip to get a golden cheese crust, add in shrimp and fold. Cook for 1-2 minutes per side or until slightly crispy.
🌿 Lastly, serve with salsa and cilantro.
Substitutions and Variations
- You can use your cheese of choice instead of provolone. I highly recommend Queso Oaxaca.
- Herbs can be easily swapped for your favorites.
- Spices can also be easily swapped for which ever ones you have on hand or your favorites.
- You can use red onion instead of yellow onion.

I recommend using Queso Oaxaca but all I had was provolone and it worked!

- 1 lb shrimp, peeled & deveined
- 1.5 tbsp mayo
- 1.5 tbsp smoked paprika
- 1 tsp oregano

- 1/2 yellow onion, finely chopped
- 1/4 cup chipotle adobo
- 1/2 lemon
- 2.5 tbsp unsalted butter
- 10-12 provolone slices
- 10-12 street corn tortillas
- Cilantro
- Salsa of choice
