Chipotle Shrimp Tacos 🍤 ❤️ These are SO good and so easy! I like to call these "Quesatacos" because they are kind of a mix between a taco and a quesadilla.

Ingredients
1lbshrimppeeled & deveined
1.5tbspmayo
1.5tbspsmoked paprika
1tsporegano
1tspseasoned salt
1/2tspcoriander powder
1large garlic cloveminced
1/2yellow onionfinely chopped
1/4cupchipotle adobo
1/2lemon
2.5tbspunsalted butter
10-12provolone slices
10-12street corn tortillas
Cilantro
Salsa of choice
Instructions
First, chop the shrimp pretty small, and pat dry.
Secondly, add shrimp to a bowl with the mayo, paprika, oregano, coriander and seasoned salt. Mix well.
Preheat a pan with a bit of olive oil on high for 2 minutes. Then, brown shrimp for 2 minutes and remove from the pan.
Lower heat to medium low and add the onion and garlic. Cook until translucent. Then, add in chipotle adobo and cook for 2 minutes.
Raise the fire to medium, add shrimp back in and cook together for 1-2 minutes. Then, turn heat off, squeeze the lemon and add the butter.
Then, preheat another pan on high for 2 minutes, add the provolone followed by a tortilla and flip to get a golden cheese crust, add in shrimp and fold. Cook for 1-2 minutes per side or until slightly crispy.
