Accordion Potatoes 🥔❤️ This is the perfect appetizer! I topped mine with @GoodFoods Chunky Guacamole because it pairs so well with the spices in the potatoes (and makes them look cute!). I love their guacamole because it tastes fresh and is made with simple ingredients.

Why You’ll Love Accordion Potatoes

These potatoes are spicy, crispy and so delicious! They are perfect for game day, especially paired with the guac. These are easy to make and honestly they are gorgeous.

How To Prepare Accordion Potatoes

🔪 First, cut the ends off the potatoes and cut into 1/2 inch slices. Shape those like a triangle by slicing the sides. Save those pieces for a soup or mashed potatoes.

🥢 Secondly, place 2 chopsticks on a wet paper towel (so they don’t move), and place the potato in between the sticks and make horizontal slices on one side. Then, flip and make diagonal lines on the other side. The chopsticks will ensure you don’t cut all the way through.

💧 Soak in boiling water for 25 minutes to reduce starches and make them crispier.

🧈 Melt the butter, add in the olive oil, some salt and infuse it with the smashed garlic while the potatoes soak.

🧂 Then, mix the spices in a bowl and add salt to taste.

🥔 Drain potatoes and pat dry extremely well.

🌟 Brush some of the butter mixture into a baking sheet and place the potatoes on it. Then, brush more butter on them.

🔥 Bake at 425F for 30 minutes, flip them and bake another 15-25 minutes or until super crispy.

💚 Lastly, roll them around in the spice mixture while hot and top with guac and cilantro.

Substitutions and Variations

  1. I used yukon gold potatoes, but you can use any potatoes of your choice.
  2. Spices are always very easy to swap for your favorites or which ever ones you have on hand.
  3. You can serve them with a dipping sauce of your choice, it doesn’t have to be guac.
  4. The cilantro can be swapped for your favorite herbs, or leave it without.

Ingredients 

  • 6-8 Yukon gold potatoes, large
  • 3 tbsp butter, melted
  • 2 tbsp olive oil
  • 3 garlic cloves, smashed
  • 1 tbsp smoked paprika
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1.5 tsp lemon pepper
  • 1/2 tsp chipotle powder
  • 1/4 tsp cayenne pepper
  • Salt , to taste
