Preheat pan on high for 2 min. Lower to medium, add in butter and bread. Toast in the pan for about 5 min or until golden
Add in ham and sautee 2-3 min. Make a well in the center and add in your cream and nutmeg. Caramelize for about 3 min. Add cheese to the edges of the pan and your eggs in the center
Cook covered until set, top with black pepper, salt and lots of chives
