Ingredients
4persian cucumbershalved and seeds scooped out
8ozsalmonsushi grade
2tbspchiveschopped
2tbspsriracha
1/4cupjapanese mayo
2tsptamarior soy sauce, and more for the sauce
1tspsesame oilmore for rubbing on hands
1tbsprice vinegar
2scallionswhite part
1lemon
Sushi rice to taste
Sesame seedsto taste
Serrano sliced, for topping
Instructions
First, chop the salmon really small.
Secondly, add to a bowl with the chives, sesame oil, 1 tsp Tamari, sriracha and Japanese mayo.
Mix the scallions, rice vinegar, lemon and Tamari to taste.
Then, rub some sesame oil on your hands so the rice doesn’t stick on your hands.
Add some rice to the cucumber halves.
Lastly, add the salmon to a piping bag and pipe it onto the cucumber boats, top with sesame seeds and Serranos.
